Crumb-Coated Chicken Thighs

Made this last night although I used skinless drumsticks. Very easy and very good, although I would not really call this "spicey" (there's no heat to it) but the spices are flavorful.

Tuna Noodle Casserole III

There is no better comfort food than this -- and no easier recipe! Marvelous, simply marvelous. My husband loved taking the leftovers to work the next day. The kids even liked it!

California Jalapeno Trout

Made this last night--super easy and good. I didn't have mangoes but used oranges instead. Excellent! This was my family's first trout experience but we were all very impressed, even our 4 year old (mommy it has eyes!) LOL This is a keeper.

Herb Chicken with Mustard Sauce

Made this tonite. Changes I made: marinated a dozen chicken thighs w/bones for 2 hrs prior in buttermilk; used crushed Honey Bunches of Oats w/Almonds cereal instead of corn flakes since I didn't have them; added garlic powder to the first 6 ingredients. Baked on 350 for 1 hr. Omitted the sauce entirely. VERY good! I'd make this again and try some other variations I've read on here as well. Easy and quick.

White Wine and Garlic Dream Cream

I had to make emergency alterations to this recipe, which I made tonight. My heavy cream went BAD so I used ladle full of spaghetti water, whole milk + melted butter for the final step and then stirred in 2 tsps white flour to thicken it up. I also added a can of drained mushrooms and a bunch of finely shopped fresh italian parsley. Topped with parmesan and it was GREAT. Horribly fattening no doubt but it was a big hit. I'd make this again no question. OH, also I used cracked black pepper instead of white to add a bit of color as well.

Basil Vinaigrette

I cut the oil to only half a cup and added a few tablespoons of lemon juice. After this was blended I put it over a fresh spinach salad with cilantro and onions. Heavenly!!

Scalloped Tomatoes

made it last night w/many tomatoes fresh from my garden. Added chopped fresh spinach, mozarella, parmesan, seasoned croutons instead of bread cubes, and a good amount of garlic. Even my 14 year old ate it. It's all gone now because I had the rest as breakfast! Very nice recipe find, thank you.
