Curried Turkey Salad

Reviewed: Mar. 3, 2008
Yummy! My alterations: Miracle Whip instead of mayo, soaked raisins instead of grapes, and added some onion. Served it on toasted buns with a little pile of shredded carrot on top of the salad.

Blue Cranberry Sauce

Loved the blueberries! I increased the sugar and nearly doubled the spices though. But then we like things more intensely flavored than others!

French Onion Soup III

This was a really good recipe. Great taste, the thyme was nice. I agree about the butter though, a bit too much. Will cut back on this next time.

Hearty Turkey Stew with Vegetables

Reviewed: Nov. 28, 2005
This is a good basic stew recipe. Instead of rice, I cooked up some barley to stir in to make it winter day hearty.

Billy's Favorite Smoky Collard Greens

Reviewed: Feb. 22, 2005
This is a pretty darn good collards recipe. Especially so because it tastes good without a layer of pork grease on the top!

Bread Machine Cardamom Bread

Worked out pretty well. Maybe needed a tad less flour. I added a full tsp cardamom and probably could have even gone stronger. Mildly sweet and good with carrot and leek soup.

Hamburger Goulash

Reviewed: Oct. 8, 2003
This was a pretty good basic recipe for goulash. I added a lot more seasoning, italian blend and black pepper, and more noodles. I also omitted the corn as that sounded odd. You do need to add water as others have said.

Vegan Black Bean Soup

Reviewed: Jul. 24, 2003
I noticed people wondering at the spiciness of this soup. Tee hee. I loved it. I used Gephardt's chili powder, a good Texas traditional brand that's got more kick than that dark red stuff. Freezes pretty well too for dh's lunch.

Banana Meatloaf

Reviewed: Jul. 24, 2003
Great idea! The naysayers have never had Carib food. Grew up in Jamaica, so I thought this was great! I served it with a little papaya chutney on the side. Update: I made this again tonight and omited the seasoning, and added allspice, a bit of thyme, a couple of shakes of Pickapeppa, and topped it with sweet catsup. Oh, and used turkey meat. Hubby liked it better this way.

Awesome Steak Marinade

Reviewed: Jun. 21, 2003
This was pretty good. Though I'd add a little more tanginess to the marinade, worchestershire or (my favorite) pickapeppa sauce and less steak sauce. I also added lots more garlic powder and regret that I shouldn't have grilled the steaks as long.

Southern Living Magazine's Chicken-Fried Steak

I had to cut down the recipe size, but this was great. Didn't take as long to cook as stated, but otherwise, just right. :) Husband said it was, and I quote, "awsomelicious."

Tartar Sauce I

Simple, easy, just about right. I added a little more onion and pickle though, and you definately should let it sit. I made up a jar of it and its come in handy several times.

Slow Cooker Chili

Reviewed: Apr. 1, 2003
This is a pretty decent base chili recipe. I used a few less beans and little more beef. The soupy consistency is solved with a tablespoon of masa. In lieu of masa, cornstarch would work too.
