Coconut Bread

I made this, the only alteration being using coconut milk instead of just milk. I doubled the recipe to make two loaves and divided them up equally in the dish. The bread rose for a minute while cooking then just caved in. Although I haven't eaten it (and it does SMELL good) I was hoping it wouldn't be only about 1.5 inches thick!
