Vini's Pork Roast

We do love this unique flavor! Something different but tasty is always welcome at the table. I gave this 5 stars all the way accross the board! My kids eat just about anything, no picky eaters allowed! So, my kids are rare but if it was really bad they would have said so. We give this thumbs up!!

Baked Pancakes with Sausages

Great Recipe! My family does love this one! We usually have this for dinner on breakfast night. So much easier than slaving over the stove fliping, while they are gone before the next pancake is ready. One dish pancakes with sausage links! One of my daughters will not eat sausage so I leave a section without sausage, so as not to even get the "essence" of sausage:) Thank you for a great recipe! Reheats well for the next mornings breakfast rush!

Braised Beef Short Ribs

My whole family loved this recipe!! Very Very Good!! We had a full meal with this! Just add bread and you have it all! We have a big family and this is perfet for us!! We even had leftovers that went over well, again! Thank you for a wonderful meal for a hearty family!

Pasta with Peas and Sausage

Fast, Easy and Delisious! I made this in a pinch! I always have Italian Sausage in the Freezer and I always have Pasta on hand for those nights when I don't feel like "cooking". I was looking for something different to do with pasta and sausage and I found this, a nice white sauce. We use spicy sausage, we love the kick! Everyone, especially my husband, loved it. I love it especially because in 20 minutes, I have a complete meal. Add bread w/ butter and a salad if you like.

Crunchy Romaine Toss

Love it!! The dressing is good! This salad is adaptable! I did not have broccoli so I took a veggie peeler and shaved in some carrots. I added cranberries and fresh tomatoes. It was delish! I especially love the dressing and will make it for all my salad needs :)

Cinnamon Griddle Cakes

Fast, Easy and Scrmptious! We woke up this mornig with no milk and 1 egg for breakfast. What to do?? We found this receipe and used the one egg and evaperated milk. They were so good we will be doing this again. Thank you!

Yogurt Shrimp Fettuccine

Talk about flavor explosion in your mouth!! What a wonderful rich pasta meal! So rich, yet I is low fat! Who would have guessed!? This is a crowd Pleaser!! Want rave reviews, make this! My kids love it, just without the shrimp. No problem more shrimp for us!! Thanks Holly!

Homemade Vegetable Soup

A huge hit a our Daniel Fast Dinner Event. The soup is hearty and flavorful! It is so versatile, you can add whatever you have on hand and add your favorite seasonings too! I recommend cutting the cabbage into bite size pieces. I left out the N. Beans, I did not have them. I also left out the celery, don't care for it in soup. I am making this again tonight, with whats left in the fridge!

Pumpkin Pie Bars by EAGLE BRAND®

I call these Pumpkin Pie Squares, they are not actually a bar cookie... They are so addicting I had to take them to church to share or I would have ate every last square myself! I could not stop myself! Everyone else had the same problem... I had a friend text me the next day to tell me she could not stop thinking about them... poor thing doesn't bake...lol. I will make these for every potluck I go to, just so I HAVE to share them!

Simple Mexican Rice

My new go to rice!! I love putting it in the oven setting the timer (checking for done-ness) then turn the oven off; let it sit there till guest have arrived and everything is on the table! Stays hot!! I had to use tomato sauce instead of paste. I also added salt and pepper. Brown the rice with the onion, garlic and seasoning to keep it firm and not mushy. I barely brought mine to a boil before putting in the casserole dish. Taste the liquid before adding it to the casserole dish to see if it needs salt. Easy to tweak to your liking!! Remember, different types of rice require different amounts of liquid and cooking times vary. I used Brown Basmati Rice which requires a bit more cooking time. Just remember to check your rice for done-ness... it takes practice :)

Oven Baked Jambalaya

Great Dish for a CROWD! This makes a huge roaster pan full of Jambalaya. Your guest will not be disapointed at all! Very easy to make and it cooks in the oven for less of a hassel. I will be doing this again for every potluck and family event I attend. Thank you!

Armadillo Eggs

OH MY... Delisious!! You must like spicy and we do!! We had them for the superbowl, leftovers were used as a side with our dinner, they reheat well. These are mostly big, eat them with a knife and fork and dip them in to some jalepeno ranch or other favorite. For extra spice, I used spicy sausage, Peper Jack Cheese and caned jalepenos in juice (less work). If the jalepenos are way to big cut them in half, this works great. Thanks for a great recipe!!!!!!!

Strawberries with Balsamic Vinegar

This is surprisingly good! I will use this often! The balsamic gives the berry a more intense flavor than just using the norm sugar mix. I love the extra flavor that the balsamic gives any dessert dish. I will use this often. Don't be afraid of the pepper, it enhances and blends well, even on sweets!!

Butternut Squash Soup

A huge success at our New Years party!! Definitely roast your squash!! I roasted them for about an hour at 350 degrees brushed with olive oil, garlic, salt, and pepper. I also sauteed the onion, and substituted chicken stock instead of water. I Doubled the recipe and omitted one pkg of cream cheese (used 3 instead of 4pks.) Amazing and addicting!!

Banana Cranberry Bread

WOW!! I Love It!! I Have Found the recipe where I can use my leftover homemade cranberry sauce every year. What a wonderful tasting bread!! Great for the winter!! I love that it makes two loves! My daughter took one to a cast party and they gobbled it up! The other loaf was a great after school snack, warmed up w/ a tab of butter and hot chocolate. My kids are still asking for more! Sorry Grandma, but I have found a new banana bread recipe.

Pizza On The Grill I

We absolutely Loved this Pizza!! The crust is the BOMB!! I will use this crust for every single pizza I make including my artichoke pizza!! We did our pizza on a pizza stone and it turned out great!! Next time we will do it on the grill if weather permits:)

Don Struble's Puerto Rican Pork Roast

This may not be a true "Puerto Rican" Pork Roast, but it is a great meal!! This is now my families favorite Pot Roast!! We love the stuffed Perperoni and Olives and Garlic!! This roast is bursting with flavor! YUM!!

Easy Garlic Broiled Chicken

OMG! This is a new favorite!!! A great last minute meal that's sure to please! It's best to use the jar of minced garlic, instead of going throug the trouble. Line your baking dish with foil!!! So much better for the juices to collect & baste your chicks easily... Also easy clean up =) luv this dish!!

Goldbrick Sundae Sauce

We do love this sundae sauce! We had a banana split party and this was a huge hit... my husband wants to eat it out of the jar!! It does sort of harden a bit on your ice cream... it is amazing!!

My Best Clam Chowder
