Zucchini Risotto

OMG although I can never get my Risotto soft enough, its still cooking and I am in heaven !!!!! finally a winner. I don't think any is going to be left because I keep going to the pan and tasting ! Thanks

I did everything except used half and half instead of the heavy cream. My family really did not like it that much. hmmm Interesting flavor but it was wierd at the same time.

Barbie's Tuna Salad

When I made this I thought it was strange, but what was strange was that I kept going back and eating it, its utterly addicting, only use a max of 2 tbls of mayo, doesnt need 6. I have had 4 cans of tuna in the last 2 days! YUMMMMMY

Baked Scallops

This dish was fabulous, the only thing I changed was added a dash of lemon juice before the bread crumb mixure and some red pepper flakes. I served it over mashed potatoes. The bread crumbs I used were Texas Toast croutons and put them in the food processor. OMG hubby and I loved . loved , loved it !!!! Great recipe, I will definately be making this again.
