Russian Tea II

Maybe I'm not the brightest, but for those of you who may have been confused too, instant tea=instant iced tea (I was scouring the grocery store looking for plain instant tea!). This recipe tastes just the way my mom made it. I left out the sugar and I found it the right level of sweetness.

Beef and Onion Stew

Oh my gosh! This is the best stew ever! I didn't have tomato paste, so I used an 8 oz. can of tomato sauce. Also added in four potatoes. Mixed it all in the slow cooker and put it on high for 4 hours. Excellent recipe!

Easy Sweet Coconut Cookies

Very easy and quick! I used rum flavoring instead of vanilla and it tasted great! Also decreased the sugar by 1/8 cup due to the sweetened coconut and used butter instead of shortening.

Slow Cooker Thai Pork with Peppers

Scalloped Pineapple

I halved this recipe, as I was making it for just me and my husband. I ended up using two eggs and a little extra bread (maybe 2 1/4 cups) and split everything else in half. Turned out great!

Portuguese Chourico, Beans, and Rice

This certainly is comfort food! I had to substitute kidney beans for the fava beans and some jarred spaghetti sauce for the tomato sauce (didn't have all the ingredients in my cupboard). It came out great! Thanks for the recipe!

Creamy Chicken Crescents

This was really easy to make and tasted great! My husband and father-in-law were really impressed with the presentation too. I had some left-over shredded Monterey Jack/Cheddar mix and a little bit of mozzarella, and used these instead of straight cheddar. I imagine the cheddar would be even more flavorful. I also added some ground pepper and Mrs. Dash to the sauce.

Mawmaw's Simple Fried Green Tomatoes

So easy and quick! Used regular corn meal and it came out fine. Made Chef John's remoulade recipe (hot sauce, mayo, and relish) to go with it. Awesome!

BBQ Sauerkraut Casserole

Browned the beef in an iron skillet and then used that as my casserole dish. The only thing I changed was using some mild homemade salsa as my tomato sauce and mixing the brown sugar in with it instead of sprinkling it on top. And I only baked it for 30 minutes at 400 F. I served it over rice. My husband really liked it and went back for seconds.
