J.P.'s Big Daddy Biscuits

Wouldn't change a thing. Rolled out the dough to 1" as instructed, but used a big cup to make fat 5" wide biscuits of perfect flavor and texture. A bit dry at the edges, soft and dense in the middle. A simple, classic recipe, thanks!

Soft Oatmeal Coconut Chocolate Chip Cookies

Added this to my list of Christmas cookies this year, just to try something new...and it was the favorite of many people! The mingled flavors of coconut and chocolate are excellent (I used sweetened coconut flakes and semi-sweet chips because it's what I had in the pantry), and the chunky texture given by the oatmeal makes for a hearty, dense, chewy cookie. I gave it four stars only because they were a little dry (but I used butter, not margarine)- but went down great with a glass of cold milk! Will definitely be making these again and again. I think next time I may add some almond pieces...mmmm....

Classic Peanut Butter Cookies

After reading the reviews, I added 1/2 cup extra AP flour and maybe 1/4 cup extra peanut butter, and a smidge of vanilla. I also substituted in a cup of whole wheat flour, trying to trick myself into thinking these would be a healthy snack ;) Fanatstic cookies! Perfect texture, beautiful light color, nice form and thickness, and, of course, delicious! Folks...if any of your cookie recipies are spreading too thin, remember 1. use softened but not warm butter (never get it goopy in a microwave!) 2. don't over-mix the butter & sugar, just barely cream them together with a lower speed until evenly mixed, 3. don't spray your cookie pans, use parchment paper or tin foil and 4. refrigerate the dough before baking. Works every time!

Italian Spinach Sausage Pie

Wonderful to eat and easy to make! Makes delicious leftovers. Beware that the stated amounts will make more than enough for a 10" pan. We also added chopped, canned mushrooms to the pie and served with spiced, stewed tomatoes on the side- both were fabulous additions! Have even eaten this with salsa- the tomatoes really complement the eggs and spinach.
