Quick and Easy Pizza Crust

I don't know what happened, but my crust just didn't turn out that great. Maybe I should have let the dough rise, maybe I should have baked the crust before adding the toppings...not sure, but the crust was very dense and a bit salty.

Herbed Potatoes and Onions

I used olive oil instead of butter and sauteed the onions in the oil a little before adding them to the dish...I didn't have the Italian seasoning so I used different spices that I had on hand (seasoning salt, garlic powder, parsley, and salt). I love that this recipe is not loaded with heavy creams. A great, "lighter" alternative to all the au gratin recipes out there.

Pumpkin Funnel Cakes

I think this was simply a matter of getting the oil the right temp.....The recipe made about three cakes, but only one came out just right. Pretty subtle pumpkin flavor, but very tasty!

Key West Penne

Cajun Scallop Chowder

This was quick, easy and fantastic! I didn't have all the vegetables so I just used fresh corn of the cob, and I used corn starch instead of all-pourpose flour, but otherwise I followed the directions and it was wonderful. The whole family enjoyed it, even my picky 7 year old!

Country Pound Cake

I made a rookie mistake and only used 1 stick of butter instead of two, but it still came out great! Now that's a good recipe! I did loose some of that buttery flavor so I topped it with a buttercream icing and it was delicious!

Apple, Avocado and Hearts of Palm Salad

I loved the textures and different flavors of this salad. I cut the apple down to one and I did not have granny smith apples so I used red delicious instead, it was still great! The dressing was fine, I certainly prefer fresh over bottled so I would not suggest using Thousand island like some others have. I did however prefer the salad with a simple dash of olive oil and vinegar, salt and pepper…There are so many wonderful flavors going on in this salad, not much dressing is really needed.

Awesome Baked Sea Scallops

I made these with small scallops and reduced the garlic to two cloves then served it over whole wheat angel hair pasta tossed in a creamy garlic butter sauce and it was awesome! I will make it again! The whole family loved it!

Garlic Butter Sauce I

I added a about a cup of heavy cream, a tablespoon of flour, salt and pepper as others suggested and served it over whole wheat angel hair pasta topped with baked scallops and it was awesome! Will make again!
