Chocolate Pie I

This is just the pie I was looking for. I've made almost this exact pie a few times in the past... simple ingredients and down-home flavor!! I did cut down on the sugar as per other reviews, but other than that no problems. Tips - For the custard, make extra sure that the yolk/flour/sugar mixture is mixed WELL and cook on med heat while stirring CONTINUOUSLY. If the heat is too low it will take forever and if it's too high it will burn. For the meringue, make sure you get NO YOLK in it, if there is even the smallest amount it will not form. By adding sugar to it, it does take longer to form than without, but the sugar is important for the flavour. Be patient.

Ronaldo's Beef Carnitas

This was a fantastic recipe.. here are my adjustments.. I baked mine in the oven for 4 1/2 hours. I put 4 Tbsp. chili powder, 3 tsp. Cumin and 3 tsp. Oregano, but followed the rest to a T. I also chopped up an onion and put it in with the roast. Tips; make sure you are using a roast with some fat on it so it will stay moist, if not, be sure and add water. No peaking while it's cooking or you will loose moisture. After about 4-5 hours, remove it from the oven and shred it up, add a can of Rotel (I actually just drain a can into the meat and use the tomatoes for mexican-style skillet corn) put the foil back on and cook for another 20-30 minutes. And that's it! Fantastic, and if you make enough you can use it in other recipes throughout the week, this beef leaves a lot of room for creativity :)

Strawberry Syrup

I made ths recipe exactly with the exception of the strwberries, I used frozen (thawed) strawberries and mashed them up. It was WAY too thin so I added 2 Tbsp. of cornstarch (mixed with a small amount of cold water) and it thickened up great. This syrup is better when cooled so it is able to thicken to the right consistency, I made a double batch of it and canned the leftovers. It was delicious served over my whole-wheat pancakes!

These are delicious! This is a fantastic healthy snack.. and super easy! You really don't need a lot of oil, I wanted to use more when I was coating the leaves but I resisted, and they were oh so yummy!

Potato Spinach Casserole

This was a great recipe! My EXTREMELY picky husband couldn't stop eating it! But in my own opinion, it needs more flavor. At the very least, more salt and pepper would suffice :)

End of the Line Ham Casserole

I bought a ham on sale and spread it out to 5 dinners... and this one was one of the best. It's great for using leftover ham on a low budget. For those of you having problems with the potatoes not cooking... did you double it? If you slice the potatoes thin (I didn't even use a slicer) and use the amount of potatoes specified they should cook in about 40 minutes to an hour like the recipe says. I added cheddar cheese and seasoned breadcrumbs to the top. YUM!

Blackberry Buckle

This recipe was a good start but needed some adjusting. Firstly, I am not big on rich desserts, but this recipe definately needed more sugar, I think next time I'll add another 1/4 to 1/2 C. to the cake mixture. Also, I had to add quite a bit more milk, at least 1/2 C. (I think I added 3/4 C.) to make it not so thick and to yield a more moist cake. Other than that, this recipe was good. (I think it needs more cinnamon too)

Parmesan Sage Pork Chops

Fabulous!! This recipe is simple and light, cruchy and flavorful. I followed the recipe exactly and it was perfect. Oh yes, but I did squeeze a tiny bit of lemon juice on top after they were done. Not too much, it will overpower the other flavors :)

I cut the oil down by half as advised by other reviews, and I'm glad I did, that was plenty. I did use onions but they were all on the bottom of the pan after I cooked it, not sure if that was my fault but I didn't do anything different in the preperation. I used mozzerella and garlic powder too, not cheddar. This recipe is a great idea but definately needs some tweaking, and this is very versitile too (I like options). Also, bake this for at least 25 minutes!!

Cowboy Oatmeal Cookies

YUM!!! this is by far the best oatmeal cookie recipe I have ever used! I changed a few minor things, I added vanilla for my own preference. Also, I didn't use butterschotch chips (sounds yummy, but I didn't have them) and aded walnuts and raisins. Everybody LOVED these cookies- and I fed them to a lot of people! This is definately a recipe I will use again and again!!

Mexican-Style Pork Chops

Easy one dish meal, but I felt it needed a few adjustments. For one, I omitted the oregeno and replaced it with 1 tsp. dried cilantro and 1/2 tsp. cumin. This made the recipe more 'mexican-style' to me. Also I used black beans instead of kidney beans, I really think there are a lot of different beans that would go well with this dish. I used minced garlic and sauteed it with the onions. All in all it was good but not great, I will try it again though, maybe add a few more things for more flavor and freshness, possibly fresh diced tomatoes?
