Tomato Vodka Sauce

Excellent - could use a little more butter for richness, but great without it too!

Iced Pumpkin Cookies

These cookies have a great cake-like consistency, and go very well with icing. I'm going to make these for my boyfriend's birthday, thanks!

Asparagus and Ravioli with Dijon Alfredo Sauce

Reviewed: Oct. 28, 2001
This is very creamy, and a little heavy on mustard side. The sauce could be a little thicker. Very nice with the asparagus. Tastes like something you would get in a restaurant though!

Cajun Chicken Pasta

Reviewed: Dec. 13, 2001
Sooo easy and sooo good. Don't use organic cajun seasoning however - I had to use quadruple the recipe, and in the end it was still quite bland...

The Best Rolled Sugar Cookies

Reviewed: Dec. 28, 2001
The dough really needed to be chilled overnight. Used the cookies to make stained glass cookies (cut out the middle and fill with crushed candy) and they were excellent!!!

Blue Cranberry Sauce

Reviewed: Jan. 3, 2002
This took HOURS less than I had expected. I strained out the cranberry skins, and after leaving it in the fridge overnight, it tasted EVEN better! I would recommend making it the night before serving.

Cheddar Chicken

Reviewed: Jan. 3, 2002
The coating was really good, but the chicken was really bland. Might have to invent a dip for this.

Chili I

Reviewed: Jan. 13, 2002
This recipe was REALLY good. My brother who doesnt eat beans ate the entire bowl without picking anything out. I did, however use small white beans (habichuelas, by Goya) instead of the other beans.

Really good, although mine came out the consistency of fudge. Dries out pretty quickly! Reheats well (good with icecream)!!

Easy Salmon

I used this to marinade the salmon, before steaming it. It was really nice - the flavor was not overwhelming, just enough.

Angel Chicken Pasta

Really easy and really good. The sauce on the pasta was a little bland, so I would put a little salt in it.

Mexican Chicken Corn Chowder

Reviewed: Feb. 5, 2002
I also shredded the chicken beforehand, but might chop it into small pieces next time - otherwise it looks kinda like, well gross. Tastes great though! Used some other suggestions - the roux in the beginning I thought was key (cooked butter and flour until light brown then threw in garlic and followed the rest of the recipe verbatim), and will add the aromatics next time. Threw in an extra can of extra sweet kernel corn, but will throw in another can of creamed corn next time - I like it sweeter. Will also go with Pepper Jack cheese next time and the Rotel was a nice addition. I didn't have any bouillon so I used chicken stock and that worked fine, but might use the bouillon for more flavor next time. I really liked this chowder (it's really easy) - I had someone hold my soup for a sec while I did something and I turned around to catch him putting a 4th bite in his mouth!

Really really good - quick, easy, and the frying really makes the difference! Be careful about buying ham that is too salty.....
