Breakfast Burritos

Quite delicious and holds you for a while! We scrambled our eggs and loved it with taco sauce. Using wheat tortillas was tough - it would tear as we tried to wrap it, so we stuck with the flour tortillas. Might try the zesty refried beans next time - this time we used fat free and it was great in addition to the taco sauce.

Mom's Chicken Cacciatore

I thought this was good but nothing special. A tomato based chicken stew. I was hoping for more flavor and complexity. It was definitely heart. Served on rigatoni.

Turkey Wraps

Made these for a road trip and got rave reviews. I was lucky enough to find a ripe avocado right at the store, otherwise I would have tossed this recipe right out. Used pre-cooked bacon which was fine, and reduced fat Swiss (grated myself), which surprisingly actually had a little flavor. Also used reduced fat chive/onion cream cheese (which I couldn't quite taste, especially over the dijon). Next time would probably go full fat on everything but everyone was quite happy. The only bummer was to spread the spread on the tortilla, which made the tortilla mushy over time. Luckily we ate about an hour into the trip. One more hour on the ice packs and the condensation from sitting on an ice pack would have done it in for sure, but this honestly is a solid wrap.

Amazing 'Pizza' Pork Chops

The man just said he would have this easily once a week. I have never heard anything like that ever come out of his mouth! The name 'pizza pork chops' really ruined it for him but luckily the taste renewed him. The flavor is so nice. I can see where the pizza comes from but really it just tastes super fresh - fresh thick cut tomato covered in fresh herbs, flavored with fresh garlic and covered in cheese. Thinner cut pork chops were done quicker (14 minutes) but I had trimmed out the bone and wish I had trimmed all the fat off because it's harder to see afterwards, but I was worried about needing the fat to lend to the moisture but it was fine. The hubby commented that they didn't look done, but really it doesn't look 'grilled' for grilled pork chops. They were definitely done and yummy in my tummy. Promise!

Fabulous Zucchini Grinders

Having this for lunch today and it's fabulous as promised. Made the zucchini/marinara mixture last night with a sprinkling of shredded parmesan that I had on hand, then toasted a roll at work before stuffing it with cheese and the zucchini mixture and microwaving it. Hearty and so easy.

Pizza On The Grill I

AMAZING! Didn't have a chance to make my own dough and bought the one I love at Trader Joe's (I like it better than the Whole Foods one which is breadier). Amazing how quick this turns out something fabulous. The garlic still tasted raw to me, so I saute it on the stove with the olive oil for a few minutes to infuse the oil now. I brush both sides of the crust and then top it with some tomato sauce (also love Trader Joe's pizza sauce) and fresh grated parmesan cheese before piling on shredded mozzarella, tomatoes and feta cheese. I also put some onions on and the sliced garlic for the hubby (on his side of the pizza). This is fantastic and is a real crowd amazer, I can't believe that crust doesn't stick to the grill, but it doesn't! When I first made it and cut it with the pizza wheel, I got sooooo excited when I heard that crunch. Unbelievable!

Absolutely Fabulous Portobello Mushroom Tortellini

This was good but a little too rich for me. I used the alfredo sauce from the first reviewer below which was great but needed to add a ton of salt (and then handfuls of more parmesan) and more seasonings to combat the blandness from the tortellini. Used a mix of spinach/cheese tortellini for a tiny bit of added healthiness.

Chili Sauce Chicken

This ingredients list and recipe title look completely dubious, but I can attest that it tastes great. Used the white wine and a bottle of Heinz's chili sauce, and ended up removing the skin prior to marination. I think it works fine. Forgot to take out the basting sauce and just heated the sauce until boiling point prior to basting. The more the better - the sauce totally carmelizes so deliciously on the chicken. Might consider making more just to have some sauce on the white rice that we served this with. So easy and awesome! Part of our grilling rotation now.

Easy and Fast Cajun Chicken Caesar Salad

This is really, really good. Used a lite caesar salad dressing and almost think it didn't do the salad justice - it's quite overpowering. The fiance and I agreed that a lighter, oil and vinegar based dressing would be perfect and healthier. Also threw in some cheese tortellini in there to add more substance though it wasn't necessary, but I did like to warm the tortellini & chicken for 30 seconds, then toss with my salad which warmed it a bit.

Sausage Balls

I didn't have good luck with these and am disappointed, I was so excited to make these. It was like the dry to wet mix ratio was off - by the time I got it all properly mixed, it was like plaster and it came out so tough and bready (probably because I needed to work it to get it all mixed). I checked the ingredient amounts several times, because I thought I was losing it. Bummer.

Creamed Eggs on Toast

I made this for one. I really loved this recipe and it works fine with skim milk. I also thought that mustard would be a great addition and tried smearing a little dijon on my toast before adding the egg mixture, and it was a little too much. Way too overpowering. I will try adding a pinch of mustard powder and hot sauce as someone else mentioned. Super filling! Make sure to serve immediately - this mixture turns into plaster if you let it sit.

Simple, Classic Chicken Potpie

This recipe is delicious and perfectly easy. Loved it, and love that it makes a bunch. Made several smaller ones and used any old bag of mixed vegetables (corn, carrots and green beans) and it was fine.

Mama's Asian Chicken and Rice

This is very sweet, orangy and heavy on the 5 spice and the garlic, so leave out the 5 spice if you're not into it. If you're into these flavors, then I can see how this recipe would be perfect for you. I wasn't sure if I was to use orange juice from the bottle or squeezed from the orange, I just went with the latter. My issue with this recipe is that the chicken pretty much is cooked after a few minutes, and then adding it back in for another 30 just really overcooks it.

Simple Sweet and Spicy Chicken Wraps

I can't believe I forgot to rate this recipe - it's awesome! It's so quick to throw together and I can't believe salsa can make something this good. The cool cucumber sauce balances out the sweet and spicy chicken, I wouldn't change a thing about this recipe.

I loved the idea of this and the texture of the rice (used brown), with the fresh tomatoes and zucchini, but the flavor was a little off for me (too much oregano and not much else). But it's a great side dish.

Dutch Babies II

Followed all of 'gooddealmeg's suggestions and they were great. It's so exciting to watch these puff up. They are filling, and I have mini cast iron skillets, so I make one per person in each. I usually add in 1/4 - 1/2 a teaspoon of cinnamon instead of the nutmeg (personal preference and what I have at home), and love to serve this with 2 spoonfuls of jam and a spoonful of water, microwaved to make a sauce. My other favorite thing to do when apples are in season is to dice an apple, sprinkle with cinnamon and a few squirts of maple syrup and to microwave for a minute, stir, microwave for another minute then throw on top of the baked Dutch baby.

Cheesy Ham and Hash Brown Casserole

This is soooo good - the hubby said he was sad to get to the end of his piece. The cream of potato and sour cream combine to give this a rich creamy background for the shredded hashed browns. I think this recipe could use more ham, I'll add more to taste next time. Grated Crackerbarrel cheddar by hand - totally worth the good quality cheese (though it makes it really greasy so might stick with regular shredded cheese next time)! Didn't need all the parmesan though threw on a good bit. Freezes well, reheats well in the microwave, and tastes great - that's the triple crown right there!

Orzo with Parmesan and Basil

Part of me wants to tinker wtih this recipe, but it's just so good - the simplicity really stands on its own, so I don't think I will. The basil makes it taste really fresh. I kept explaining what I wanted to make to the fiance, and he wasn't interested, but after tasting it, he said 'Why have you been hiding this from me?' Loved the delicate flavor of the fresh parmiggiano reggiano, and LOVED that this recipe used the entire can of chicken broth and doesn't leave me with 1/2 a cup that I don't know what to do with! This recipe is absolutely perfect, and except for the fresh basil, I expect to have everything I need on me at all times.

Grilled Garlic Parmesan Zucchini

We seriously loved this. Our mini zucchini got 4 slices, and I kinda ate 3 before my man noticed :(. Used dried parsley with no problems, as well as parmigiano reggiano, but I'm sure that the bottled stuff would work just as well ;).
