Sirloin, Pepper and Onion Skillet

Really good. I misread the ingredients and sliced the steak into 3/4 inch strips (whoops, I feel dumb), so it came out really chewy/tough, but the flavors were solid. Delicious sauce, and loved the peppers and onions. Not your typical fajitas (heavy taco/fajita flavoring), but savory and delicious and great with cheese as mentioned by others. Also doubled the balsamic and would do that again next time. I would love a more tender cut of steak.

Stuffed Shells I

So. I don't like cottage cheese but wanted to give this a chance, so I made half the shells with ricotta instead, in case we didnt like the cottage cheese ones. Oh and I used small curds (in the snack packs) instead, cause I thought the large ones might be gross! It turned out after eating the cottage cheese ones, I couldn't go back to the plain ricotta ones! The cottage cheese ones were so much richer and had good texture, I start thinking about the leftovers at like 10:30, when lunch is at 12, and cant wait until that time to eat them. We had extra filling left over, and some extra manicotti shells; it made a really good manicotti filling too. The only suggestion I would make is to season the filling a little bit with Italian seasoning, but other than that this dish is EXCELLENT. *Update* I've now added one box of defrosted frozen spinach (rinsed and squeezed dry) and about half a pound of cooked ground sausage, and it's so delicious. It makes this really hearty and works well if you have a needs-meat significant other like I do. Otherwise I would still do the spinach for some added vitamins without the meat. The large curd cottage cheese I found out is big and soft and not small and grainy like the small curds, and the texture is unnoticeable especially if you have spinach and sausage in there, so that's only what I use now!

Smothered Beef Short Ribs

This was my first venture with short ribs and it was incredible. The flavor is sooo good and it is perfect on top of mashed potatoes. The perfect Sunday night dinner when you don't have much to do. Though it takes a while, most of it is just sitting and trying to hold yourself back from attacking the pot when it really starts to simmer and the aroma fills the house. Try to buy boneless shortribs if you can - less fat to deal with later.

We really loved this soup. It's got a delicate tomato flavored broth and is perfectly filling with the tender meatballs and potatoes. The meatballs did add a lot of fat to the soup, even though I used super lean beef, so take the time to de-fat if you can! Or maybe I'll try baking the meatballs for a few minutes first on a rack as someone else mentioned. But for someone who hates meatballs, these were great - the texture is tender and not tough.

Flank Steak Barbecue

Oh god this is soooo good. Went to Costco and needed to make food for a crowd and they had a great deal on flank steak and I remembered I had this recipe in my recipe box. It turned out soooo well and fed a crowd. Served it with white rice, but this would be great on a salad also.

Spanish Chicken and Rice

My rice didn't cook properly (mushed on the outside but hard inside) but this was such a tasty dish. The chicken needs more flavor, but it's sooo filling and delicious. The flavor in the rice is so so good.

Pork Chalupas

The best! i was doing the burrito thing until I just figured I'd try other people's taco salad suggestion. It was very salty, so I would cut the salt by half, especially if you're eating it on crushed tortilla chips. Covered in lettuce, tomatoes, salsa, shredded cheddar and sour cream, it's awesome. Also great in burritos, might throw some crushed tortilla chips in there also for some crunch. The beans came out slightly underdone, so I might leave it 9 hours next time and make sure to stir better.

Mom's Red Scalloped Potatoes

Ok, this might replace our Thanksgiving mashed potatoes, we loved them that much. Made them without the onions and may try to replace it with something else, but the sauce is cheesy and delicious, and the whole dish comes out luxurious. Definitely needed the extra 20-30 minutes that everyone else suggested.

Sweet and Tangy Slow Cooker Bar-B-Q Pork

Both sweet and tangy as promised. This is really good. I thought some of the pieces of meat could have been cooked for longer as it was still a little tough, and we were sorry to not have trimmed the fat off the meat before it went in the cooker, but the tender pieces were sooooo good. Loved it served on white rice as the sauce heats up watery and delicious.

Saltine Toffee Cookies

These are awesome, but make sure you have everything lined up and ready to go - I was cooking the sugar/butter mixture and then had to scream for the fiance to help lay out the crackers. My bad :) Used crushed candy canes instead of pecans for Christmas and it was awesome. Bagged a few chunks with some Cinnamon Roasted Almonds and Frosted Pecans (from this site) and gave them to people I liked and people I want to like me :) Huge hit!

Easy Indian Butter Chicken

We reaaaaally loved this one. I couldn't believe that these smells were coming out of my kitchen! I never thought I would be able to do this, but it was super simple and really delicious. I also stirred in a 5 oz can of evaporated skim milk (after turning off the heat in the end) instead of using the heavy cream. I tried stirring it in in the middle, but if you don't have something with enough fat (like cream), then everything curdles. Trust me, I learned my lesson, twice. This tastes like a tikka masala. Served with basmati and store-bought naan.

Easy Turkey Gravy

This came out good but a little floury (gritty/powdery) and was not as dark as I was hoping, but I also didn't have as much drippings as I was hoping, but this did really taste great (it was perfectly seasoned), and was the perfect accompaniment to Thanksgiving dinner.

Slow Cooker Manly Stew

I thought this was ok but nothing spectacular. It does turn out into a good stew but needs potatoes, carrots, maybe tomatoes and thyme to be great. Served on egg noodles, it's reminiscent of beef stroganoff, but seems to be missing the 'umpf'.

Burrito Pie

LOVVVEEDDD THIS! I couldn't believe how good this came out. It didn't make as much for us as it sounded like it made for others, and I added 1 tablespoon of taco seasoning (from this site) since the meat mixture was going to have to stand for all the flavor between tortillas and beans. Whoever suggested doubling the tortillas is totally right on. I also smeared the beans on as its own layer.

Salisbury Steak

This came out moist (although I think that was because we mistakenly bought 80/20 beef and not much fat came out during initial searing), but I thought the sauce was too cloying and tangy - all I could taste was too much worcestershire with hints of ketchup - the flavors never melded. My fiance however loved it. We served it over Garlic Mashed Red Potatoes on this site, which was really good.
