Banana Chocolate Chip Muffins

I made these with a few changes, as some suggested. I added 2T cocoa, and 1/2 cup of milk. all else I kept the same...but did bake at 350 degrees. Delicious.

Avocado and Edamame Dip

Quick Lemon Dijon Chicken

This is so quick, and easy and very tasty. I love it, and my son likes it. I'm sure my husband would too. Thank you. I think it would go nice over rice or with roasted potatoes.

Southern Style Fried Mushrooms

The Best Parmesan Chicken Bake

This is so easy and delicious, I can't believe it tastes as good as it does. It is not your typical Chicken Parmesan, however, let me just tell you that this is so tasty you won't care. Another reviewer is correct in that when you reheat any leftovers, the croutons will not be crunchy, as they have now sat in the sauce, etc. and turned soft, but for me that was ok. It was still a yummy leftover meal. I used stuffing since I had no croutons, and they worked just fine. Thanks Chef John!

Lemon Garlic Mushrooms

Good recipe, I think the lemon was too much (or possibly I put too much, not sure) I compensated for the intense lemon flavor by adding some white balsamic vinegar and a little extra salt and pepper.

Italian Sausage Soup with Tortellini

This soup is amazing. I added some baby spinach, and little hot pepper flakes, and those were the only changes I made. Thanks for the tomato tip of dropping in boiling water, etc., that worked well. Also, the tip on using only the amount of tortellini at each serving, I will save the rest and add when I have some next. It won't last long, it's so yummy! My Italian parents would approve heartily.
