Broccoli Cheese Skillet Potatoes

Easy and definitely a feel good food. I didn't have brocoli soup on hand so I used cream of mushroom and added in some shredded cheddar cheese until it had enough cheesy flavor. The cheese made it thicker so I also added more milk for a better consistency. Everyone, teenagers and all enjoyed it.

Shrimp Linguine

My teenage son announced that he would like pasta with shrimp. So glad to find this recipe! It was great! It was even good heated up which surprised me. Ended up having to add some salt after everything was on the plate because I didn't' taste the sauce first. Maybe didn't get enough salt in the pasta?? For anyone who likes shrimp and pasta, give this one a go.

Eileen's Meatloaf

I'n not a meatloaf fan, but I liked this one! Didn't have dry onion soup mix so I just sauteed some onion and threw it in. Added some extra salt to make up for the salt I lost from the soup. I also didn't have an hour for baking so I used a muffin pan like I saw on one of the other recipes and they were done in no time and still very moist. I will make this again.

Crunchy Fun Drops

Huge hit will all ages at my daughter's graduation party. A representative from the senior ladies table came in for a plate of them to share! Still too sticky after overnight at room temp. Recommend some frig time. Used the freezer because I was crunched for time,but it turned some of the pieces white- still tasted good though. Try breaking up the noodles into smaller pieces and you'll find the pieces are much easier to drop off a spoon and stay together. Too sticky to roll.

Peach Cobbler

Big hit at the church social. None left till I got through the line! Had to make copies of the recipe to hand out. For some reason my batter was too running so I added more flour and everything turned out great. Doubled the recipe and more than doubled the peaches- used fresh ones. Give yourself plenty of extra baking time if you double this recipe. Excellent!

Pumpkin Ginger Cupcakes

This is as good as a pumpkin muffin gets! Even folks who don't like pumpkin desserts like it. Has a similar consistency to Amish Friendship Bread. Used vanilla pudding because I didn't have butterscotch and increased ginger to 1 14/ t and no crystallized ginger because I didn't have that either and it was delicious. You don't have to add the icing unless you want to have the extra sweet/calories! No one will refuse them without the icing. Throwing in a few chocolate chips or raisins can work too. You should make this.
