Lemon Raspberry White Chocolate Mousse Cake

This one received rave reviews from my family and coworkers! I baked the cake according to the directions on the box, but subbed butter and milk for the oil and water (I always do this with boxed mixes, as it gives them a much richer and more homemade taste). Instead of the mousse, I made a white chocolate buttercream frosting, by mixing 1 cup butter with approximately 2 cups of powdered sugar, then adding 8 ounces of melted white chocolate and beating on high for 3-4 minutes until light and fluffy. A great springtime treat!

Chinese Chicken Fried Rice II

So much simpler than I thought fried rice would be! I added shrimp, mushrooms, sliced carrots, and a little crushed garlic when sauteeing the onions. I made fresh rice, spread it on a plate and stuck it in the freezer while preparing the other ingredients. By the time I was ready for it, it was cold, and I had no problems with it being too sticky or uncooperative. This will definitely become a regular part of my rotation!

Key Lime Pie VII

Very good with a few slight modifications: -I made a homemade graham cracker crust, which is really simple and elevates the taste so much. I used "Graham Cracker Crust" from this website. -I used bottled key lime juice, as my local store did not sell key limes (and I'm too impatient to spend that much time juicing limes!). Because of this, I also omitted the zest. I'm not sure if this juice is a little extra potent or not, but next time, I will cut back ever-so-slightly on the amount of lime juice I use, as it was a little overpowering. -I kept my pie in the oven for 11 minutes and it never bubbled. It doesn't seem to have caused too much trouble though, as it has a nice firm texture after sitting in the refrigerator overnight.

Monkey Bread Made Easy

Love the idea of making this in muffin tins - I don't know why I never thought of that before! The only slight problem I had was that the muffins all kind of fell apart once I took them out of the tins - I'm wondering if this was because I cooked them for a few minutes less than the original recipe indicates. Fortunately, I wasn't making them for any sort of formal occasion, and they sure tasted great, even if they were all in pieces!

Garlic Feta Dip

I've made this for several different parties, always to rave reviews. Love how simple and relatively healthy it is. It doesn't taste super garliky as you're making it, but the garlic flavor really comes out after it has rested for a bit. Don't make the same mistake I did the first time I made this and add extra garlic because it doesn't seem strong enough - just be patient; it will come! I've also added a little basil and cilantro, and a few red pepper flakes when making this a couple times - that seemed to really kick it up a bit.

Sweet and Salty Granola

Excellent basic granola recipe - and I love that it doesn't use oil! I added a cup of chopped pecans to give a little variety, and used about 1 1/2 teaspoons of pumpkin pie spice plus 1/2 teaspoon of cinnamon instead of a full two teaspoons of cinnamon. I had trouble getting the oats to clump together, but didn't mind because the taste was so great! Next time I make this, I might make a little more of the liquid mixture to really coat everything more thoroughly and hopefully get it to clump a little better. My boyfriend couldn't stop eating this, and said it got rave reviews when he took it into the office! I highly recommend this simple and relatively-healthy granola recipe!
