Asian Orange Chicken

My family thought this was just a little "Orangey" so I'll cut back on the orange zest next time. Otherwise we loved it. I followed Jeanette's comments/suggestions and that helped a lot. I also agree with another reviewer that found this recipe to be a lot of work for a weeknight but one a cold weekend this would be great!

Spanish-Style Quinoa

Made this last night and I couldn't be more in love! I pumped up the flavors adding a little more of the onion, garlic and spices (1 1/2 t garlic salt and 1 t cumin). I exchanged the toms for a can of chunky fire roasted tomatoes and omitted the bell pepper. For creaminess I added about a 1/2 c of Coinga cheese (Spanish Semi-cured cheese) I had from Costco. Served as a side dish with a small dollop of sour cream. Thank you for this recipe! YUMMMMM Oh and this morning we made breakfast burritos with scrambled egg, Spanish Quinoa and a slice of pepper Jack cheese wrapped up in a whole wheat tortilla. It was a total hit!

Quinoa and Black Beans

Oh My G-d! This is my first time making quinoa and I was a bit nervous. I took comfort that the flavor profile is one that I love and that there were so many great reviews. Nothing could have prepared me, though for how great this is! I used quinoa beads from Trader Joe's and didn't rinse or soak them. Just tossed them in with a little more onions and garlic than called for. I also upped the cilantro a tad because I chopped a little too much. I added the beans I had on hand, 1 can of black and 1/2 can of white with a cup of canned corn. It seemed like it needed just a bit of color so I also chopped some red, yellow and orange mini sweet peppers. Delish! We will be adding this to our regular recipe rotation!

Potato Latkes I

Thanks Rachel for the great recipe! I used this to jump start my Chanukah season and refresh my memory on how to make them. I vary the ingredients amounts and add a wonderful basil poultry rub (basil, thyme, sage among other things) to enhance all the flavors.

Holiday Chicken Salad

I loved this salad. It's truly as good as everyone else has said it is. There are a lot of ingredients so I pulled a few out the second time I made it just for something different.
