Mandarin Almond Salad

Real Hummus

I wish I read the below review before making this! It was definitely too salty, and perhaps had a bit too much lemon in it. But it was really easy to make, and cheaper than buying it in the store, so I will attempt again.

Black Beans and Rice

This was a good recipe, very simple to make. I made this into a complete meal by adding diced tomatoes, cilantro, and pulled pork for BBQ (recipe on the site - did not add the BBQ sauce, just put the pork into the mix). This was tasty and quick!

Tomato Soup I

Incredibly good soup, and very easy to make. I used crushed tomatoes for a smoother texture, and added in fresh garden tomatoes as well. Reduced cream to 1 cup, but will use half and half next time or reduce cream further.

Zucchini Pasta II

Very weak sauce unless you are willing to at least double the cream cheese, like most reviewers have done. At this point, however, it stops becoming a lower-calorie main dish. Also, cooking times for veggies and zucchini seemed a bit long. There was no crunch left to anything at the end.

Spinach Brownies

I cook with less butter becuause it seems to come out a little greasy. Try adding artichokes for a "spinach and artichoke" dip taste.

Black Bean and Corn Salad I

Excellent salad! I made this with fresh cilantro because it seemed wrong to do it any other way. Pretty versatile, too (on tortilla, with chicken, add rice, etc). Will be using this recipe all summer. One thing to note, this seems to make more than six servings. My finished product was at least ten cups, and I only added 1/2 cup red bell pepper into the original recipe.

Bow Ties with Sausage, Tomatoes and Cream

This is a keeper! One of the few recipies I've tried that's true to it's "ready in" time. Agree that it needs a little more than the recipe calls for, so I added: 1 chopped red pepper, Italian Seasoning, pepper, 1/2 can tomato paste, and fresh grated parm cheese. Would also be excellent with sliced fresh mushrooms, but unfortunately, my boyfriend won't eat them.

Blueberry Cream Muffins

This recipe is a keeper. I subbed half the flour for whole wheat and used light sour cream. Used a bit more blueberries then called for and also added pinch of cinnamon, dash of lemon juice, and sprinkled sugar on top before baking. Texture came out perfect! With the cinnamon addition, I think this would be a great recipe for peach muffins.

Frank's Famous Spaghetti Sauce

Bland and tasted too strongly of tomato paste. Oregano and basil did not help matters. Was not as meaty as the description suggested.
