Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

The taste was flat and lifeless. Tilapia is a good fish to select to pick up flavors unfortunately it was not used to its best in this recipe.

Big Game Grape Jelly Barbeque Ham Sandwiches

The basic process is OK; although we found the sauce to be way too sweet. The problem is that the vinegar and mustard are completely overwhelmed by the sugary jelly, brown sugar, and chili sauce. It really needed more tang, heat, or smokey flavor to turn back the candied flavor of the BBQ sauce.

Spicy Catalina Swai

This was a very good recipe. The fish was not the typical flavor and that was good. We have made this twice. The second time we subbed out the mustard for Curry Powder and it gave the fish a really interesting zing.

Boilermaker Tailgate Chili

We have made this chili over 12 times and not a single failure in the batch. I have rarely had a recipe as fool-proof in my kitchen full of fools. Sure, I tweak it a bit here or there, but the core of the recipe is a solid winner.

Brazilian Black Bean Stew

I have made this a couple of times and I am finally getting it where I want it to be. By the books this recipe is very very bland. The texture is fantastic, but the lack of flavor makes this meal seem only halfway there. The problem is that you need to add flavor without upsetting the balance of texture. I have decreased the water to 3/4 cup, upped the garlic, added cumin, added black pepper. This has resulted in a recipe that tastes as good as it looks.

Bacon-y Bok Choy

I used regular bok choy, increased the bacon a bit (everything is better with a bit more bacon) and everything came out great. I can see this making an appearance monthly at our table.

Jiffy Jambalaya

I tweaked the list just a bit. I added some chicken breast chunks, upped the hot pepper sauce. Then I added a lime slice and green onions as a garnish. This has become a great meal to have for a quick dinner that everyone in the family loves.
