Pecan Tassies

We REALLY enjoyed these. We made two batches. One batch as written and for the second batch, my husband added 3 dark chocolate chips to each tassie before adding the batter and pecan. Both batches were delicious. Also, we used a ½ teaspoon of chopped pecans and ½ tablespoon of batter for each tassie. Using these measures made the assembly process faster. To form the little shells: We just put a plastic sandwich bag over the top of an unopened bottle of marinade. Just invert the bottle and press it into the dough ball. This forms a decent shell rather quickly.

Sweet Corn Bread

Excellent. I used 1/2 cup of sugar. UPDATE 07/01/2010 - I "baked" this in my crock pot because I did not want to heat up the house by baking it in the oven. I made the recipe as written (except I used 1/2 cup of sugar), then I poured the batter in my greased crock pot. Cooked on high for 3 hours. It was just as good as the baked version!

I have been making these for about 10 years. They are great. I often use this substitution for the self-rising flour: 4 cups all-purpose flour, 2 teaspoons salt and 2 Tablespoons baking powder.

Chocolate Peanut Butter Cup Cookies

The best! So peanut buttery and yet still chocolately. Yum. Yum. I substituted vegetable shorting for half of the butter. In addition, I only added 2 cups of flour.

Salisbury Steak

Quite Delicious! The only thing I'll do different next time is to make the steaks smaller because my husband and I need portion control. I used prepared mustard instead of mustard powder, (because that is all I had) and it was great! Thanks for submitting this recipe.

Mini Meatloaves

Super! Added a little chopped onion to the meat mixture. I did not cook them in the oven because it's so hot here. I made the little loaves, then browned one side in a med-high heat skillet. Turn the loaves and cover with sauce. Turned heat down to med and cooked, covered for about 20 minutes. Yummy.

Peanut Butter Choco Chip Cookies

So good! I added a splash vanilla and used both brown and white sugars. Also, I used half dark choc chips and half semi-sweet. Next time, I'll just use the semi-sweet chips.

Brown Rice and Black Bean Casserole
