About this Cook
i'm a transplanted southerner with an obsession for baking. i'm a sahm to my two lovely children and i love being able to stay at home with them! i love to read, write, and blog, and of course COOK :)
My favorite things to cook
i love to cook most anything, but baking is my favorite. bread is what i enjoy making the most, but i also love to make cookies, cakes, pies, etc. anything sweet! i have a huge sweet tooth and i love to indulge it in small amounts ;)
My favorite family cooking traditions
southern food, y'all! hot browns, biscuits, greens, pinto beans, chicken and dumplings, all kinds of goodies--ooey gooey cake, homemade ice cream, etc. my mom is the BEST cook.
My cooking triumphs
all of my bread knowledge as far as yeast breads go is self taught, and i have become pretty accomplished in that arena, so i'd call that a triumph. i also have become an expert in hiding things like spinach and zucchini in my kids' and my husband's food ;)
My cooking tragedies
not too many, but i HATE it when things don't turn out like i wanted. i'm a perfectionist in the kitchen.

Chococonut Chip Cookies
these cookies are fabulous. as another reviewer said, if you think of them as just the perfect chocolate chip cookie, you won't be disappointed. i find the coconut adds more texture than anything--the flavor is subtle, but it imparts a rich chewiness to the cookie that is just...MMMMM. NOM NOM NOM. i have found that the secret to taking this recipe from just delicious to 'drop dead' is the use of good quality vanilla (i use vanilla bean paste) and good chocolate. i took some of these to my neighbors and they raved about them, as did my husband's co-workers. this will be my go-to chocolate chip cookie recipe for life, and that's sayin' something ;)

Best Chocolate Chip Cookies
i doubled the recipe and made them with 2 cups of milk chocolate chips, 2 cups of chocolate chunks, and 2 cups of pecan chips and my husband took them into work with him--they got rave reviews. this one's definitely a keeper--thanks! :)

Caramel Heavenlies
mmmm, i love these! i use this recipe all the time with different variations as well. the most popular so far has been the addition of peanut butter chips with the marshmallows and the substitution of dry roasted peanuts for the almonds :) i always use a full cup of butter and brown sugar for the caramel because we are caramel nuts in this house! these are so delicious and easy. i sent them to work with my husband and everyone that baked asked for the recipe.
