Easy Cake Batter Fudge

I doubled the recipe because I didn't think it would cover the bottom of the pan. Mine never set up and ended up being a gloppy mess

YUM-O! I used almond extract and a vanilla bean to flavor mine. Scraped the inside and added it to the mixture. The perfect cross between just sweet enough but not too sweet. Oh...and you won't break your teeth biting into this one! LOVED IT! Tastes like a pro made it!

Whole Wheat Pancakes

WOW! Talk about good! I made a few changes to the recipe, instead of wheat germ, I added 2 packets of instant oatmeal (apple), and it flavored the panckes very well! So moist and fluffy! They freeze and heat very well. This is now our "go to" recipe when we want pancakes! YUMMY!!!!

Tiramisu Layer Cake

If I could give this cake 10 stars..I would! Easy to make and not as sweet as traditional cake. I agree with the others who said double the coffee and coffee liquor. Give this one a try, you'll be glad you did!

Cornbread Salad I

This recipe had WAAAAY too much mayo in it! I would cut the mayo/ranch dressing mixture in half. We always made this recipe with black-eyed peas and it's super yummy! Just don't use all of the mayo mixture. It overpowered the taste of anything else in it.

Awesome and Easy Creamy Corn Casserole

So easy...so delicious. Went out on a limb and made this for a crowd I hadn't met before...everyone LOVED it! Everyone raved about it and asked for the recipe. Thanks for such a quick and easy dish! A keeper for sure.

I ate these in Mexico and was thrilled to see the recipe here! They served these for breakfast and sometimes puried strawberries (very few..mainly just for the color and very mild taste) and added them to this recipe. YUMMY!

Chocolate Mousse Cake IV

This recipe was really good. When I put the cake in to bake I put the metal bowl and beaters in the freezer. Also! for those that had problems getting their whipping cream to whip, oil of any kind is diaster for cream, so before you put it in the freezer, add about a capful of vineger and a teaspoon of salt to the metal bowl and use a paper towel to wipe it all around the bowl, rinse it well, then put it in the freezer. The cream of tartar is a must also, great stabilizer! I had to stir a loooong time to get the powdered chocolate pudding and pie mix to mix well enough so that there wasn't any grit left. I also put the cake in the fridge after it had baked and cooled, during all those "chill for 30 minutes/chill for an hour" steps and it really helped when you went to frost it. Over all, it was a pretty easy cake to make, all the steps just make it seem difficult. Give it a try!!

Bread Pudding I

This recipe was really, really good and very versitile! I used bread straight from the sandwich loaf you buy for sandwiches. I had a can of Comstock apples that I chopped and added in, and the juice left in the can I added to the margarine (it wasn't much). Then I was thinking that it might come out too moist, so I thought some oatmeal might be good, all I had were the packets of instant Maple & Brown sugar, so I added two of them, and it came out really really good! Not too moist. I might add a little more sugar next time as the apples didn't have any and it needed extra. Otherwise, really yummy! I too used the the vanilla sauce from Grammas Bread Pudding, it made the sugar mixture that was missing just right, otherwise, too sweet. Will use this one over and over again!

Truck-Stop Buttermilk Pancakes

Well worth the trouble. I made them ahead and froze them, then nuked them in the microwave for a quick and easy breakfast. I added a little vanilla for flavor and it worked out just fine. I also fried the bacon ahead of time also and froze it as well, made breakfast really fast and really easy.

Fudge Truffle Cheesecake

OHMYGOSH....this is sooo good! I made it using Hershey's semi-sweet chocolate chips and I used graham cracker crumbs instead of the vanilla cookies, and it was PERFECT! I put boiling water in a pan below the cheesecake while it cooked just to make sure it wouldn't crack, but I think it wouldn't have any way. I could only find my 10 inch springform pan and it still came out perfect! I dare you not to love it!!

Pecan Pie V

Yuck! This pie never set for me and I followed the directions exactly. My top wanted to burn and after cooking it for the 40 minutes, it was no where close to setting. So I kept cooking it at 10 minute intervels, and after an HOUR longer....I just gave up and dumped it in the trash.I have a temp gage in my oven, so I know it was running true to temp., so....maybe you'll have better luck. I'll stick with the tried and true.

Buttermilk Pancakes II

There is a reason why everyone gave this recipe a 5 star rating...it's that darn good!! A slight crispness on the outside, and light and fluffy on the inside. I have made homemade pancakes for over 25 years and decided to try this recipe (after all...over 334 people gave it five stars!), and I'm so glad I did. This is my new buttermilk pancake recipe, but if you don't mind, I won't tell anyone where I got it!!! Thanks bunches!!!

Pumpkin Bread

I wouldn't say this was the best pumpkin bread I've ever had. It was o.k., but it was missing something, couldn't quite put my finger on what it was, maybe more nutmeg??? Otherwise, it was kind of bland. I won't be making this one again.

Gingerbread Waffles with Hot Chocolate Sauce

I was looking for a chocolate sauce recipe for plain chocolate cake when we had unexpected company drop by and this one looked quick and easy. It was SO YUMMY! Two thumbs up and five stars all the way! The choco-holic we served this too called and asked if we send him some more. It wasn't overly sweet, just the right amount of sugar. I'm looking forward to trying the waffles this week-end. Great recipe.

Apple Cake III

I added canned peaches (slices, in syrup--I used the large can) instead of apples, and chopped the slices in 1/2. Since there was nothing else added in the cake, I poured some of the syrup in the mix to add a little extra flavor. I also added a pinch of nutmeg and some cinnamon (for that peach cobbler taste). It took a little longer to cook but came out just fine. But I agree with some of the others, it does need SOMETHING, such as a sauce (although I'm not much on sauces) or a scoop of vanilla ice-cream. Overall, I would make this again.
