Best Ever Jalapeno Poppers

These are just wonderful! The jalapenos are still slightly crispy and even have a very slight sweet taste. I love that, much better than the over processed jalapenos you get in the commercial variety. I did skip the bacon (never been a fan of that in poppers), and used a lovely mix of strawberry jam (raspberry would be good too) and cayenne pepper to dip them in. I also added more cheddar in relation to the cream cheese. No leakage AT ALL......even made a "soy cheese" version for my lactose intolerant roommate. The breading was just incredible......can see me using that for various things!

Caramel Apple Pork Chops

Wow this was great!! I doubled the sauce per suggestions, and I also fried the chops at a lower heat for a longer time. Next time I will salt the chops themselves before cooking and add minimal salt to the sauce itself. But this was wonderful......had that good feeling you get from having a wonderful meal all evening!! The best part was I only had to clean one pan for this beautiful and impressive meal!! Highly recommended.

Baked Pork Chops I

I took some advice from pervious reviewers and made sure that I fried the chops until the outside was very crispy (make sure the oil is hot before adding the chops, makes a difference in how tender they turn out). I also doubled the gravy, and used 1 can cream of mushroom and 1 can golden mushroom. That really helped keep the dish from having that "some kind of meat covered w/cream of mushroom soup" taste. I also sauteed some fresh mushrooms in the pan I'd cooked the pork in and added them to the soup mixture. I added some extra garlic and just a couple dashes of cayenne. I cooked the chops for 20/20.....needed less cooking time I think cause I'd browned them so well. Turned out wonderful!

Cowboy Mashed Potatoes

Wow these are great. I used red potatoes and regular russet potatoes. I also used a whole jalapeno and a couple dashes of cayenne. I did not have any problems with these being not creamy enough after adding the butter and the cheese. I did use real butter, maybe that makes a difference.

Salmon Cakes II

This was good. I added a little more hot sauce and some garlic. I was out of flour (I know, pretty weird, I had no idea), so I used Ritz Crackers for the coating. I also added about two teaspoons of mayo cause it wasn't sticking together very well. It turned out great. I do agree w/the reviewer who said it needs a sauce. I dipped mine in lemon juice, but a nice mild white sauce would have been great.

Honey Grilled Shrimp

this was the best. Didn't make any changes, except to triple the recipe!! (Glad I did!) I did take a previous reviewer's advice to put the veggies on seperate skewers as they took longer than the shrimp to cook. Absolutely awesome.

Caramelized Baked Chicken

this is great and really easy. I have tried it covered and uncovered. I prefer it covered for all except the last 15 minutes of cooking. That lets the sauce thicken, but if you leave it uncovered the whole time the sauce seems to scorch and give it a smokey or even "burnt" taste. Great recipe.

Taco Pie

This was great, I loved it! I too added refried beans, and I left off the chips just because I forgot to buy them and the ones I had at home were stale. I added some onions to the meat mixture, and topped w/tomatos and raw onion. This recipe is highly customizable to your tastes.

Red Pepper Soup

Absolutely awesome! And so easy! I added a dash of cayenne pepper (not enough to make it hot, just enough to flavor it slightly) and a dollup of sour cream in the middle. It was great.

Angela's Easy Breaded Chicken

This is GREAT! I used the Good Seasons Italian mix (I made the dressing with balsamic vinegar and the "Zesty Istalian Mix"), and marinated the chicken in it for like 2 hours. Then I followed the recipe as written. Did the "shake 'n' bake" thing to coat it w/the breadcrumbs. Served with http://sidedish.allrecipes.com/AZ/LmnHrsrdishNwPtts.asp Lemon Horseradish Potatos. Coconut Cream Pie I

This was really good. I wanted to use coconut pudding, but the store didn't have any, so I used white chocolate instead. I did use extra coconut. Yummy! :-) I would give it a 6 if I could!!! So easy!

Mock Pate de Foie Gras

This tastes good and is pretty. (Well, as pretty as you can get liver sausage to be!) I added a dash of hot sauce to mine. HOWEVER, there should be a step in here where after mixing all the ingredients together, you return it to the fridge for an hour or so to let it firm up before trying to form a ball and roll it in nuts. It is much easier to handle that way.

Chicken Valdostano

This was really good. (I didn't have nonsalted butter, so I used the salted kind and it was a little satly, but I like stuff salty.) I wasn't however overly impressed with the "white wine mushroom sauce". It didn't take away from the dish, but didn't add that much to it either, and it took a while to make. I think next time I will just sautee the mushrooms in the butter and leave it at that. Nice recipe tho, and thanks for introducing me to fontina cheese. Never had it before and really like it!
