Amazing Chicken

This really was amazing chicken. The mayonaise kept it unbelievably moist. I used the advice of others to use a brush to apply the mayo, added some italian Good Seasonings dry dressing to the mayo, and added some garlic, parmesan and parsley to the bread crumbs. Extremely easy and very good.

Lemon Sauce for Salmon Patties

I sauteed some garlic in the butter before adding the flour. I also added some dill weed. This was delicious on salmon cakes. This sauce is quick to make, but have all your ingredients out and ready to go. It thickens quickly once you add the flour and milk.

Oven BBQ Ribs

I adapted this recipe for (oven) pulled BBQ chicken. (I'd never made it before so I really appreciated the help from the original recipe & from the reviewers.) I marinated the chicken in beer for about an hour, then simmered it in the beer/water mix described here for a little over an hour. I used a bottled BBQ sauce, but added some lemon juice and dehydrated onions. Then I used the pan I'd seared the chicken in to brown some garlic. Then I added the sauce and simmered it for about 1/2 hour. Then I covered the chicken with the sauce and baked at 200 for almost an hour. I shredded the chicken and mixed it up with the sauce. It turned out FANTASTIC and I will use this again in the future.

Chrissy's Tangy Seafood Dip

I thought this was great. The original recipe does have way too much old bay and worchestershire. I cut to about 1 tsp each. I added a little lemon juice and about 2 oz. mayo instead of 2 oz. of cream cheese. It's very good and close to the Olive Garden's version.

African Curry

I agree with the people who said this turned out great because they are great cooks. You do need to customize the recipe to your taste. I used about 2 teaspoons from a jar of minced garlic. After sauteing the onion & garlic until the onion was tender, I added the tomato and sauteed garlic, onion, tomato together for about 10 minutes on low. I used the canned whole peeled tomatoes, but I diced them myself. Instead of throwing out the juice, I reserved it. While cooking the chicken I slowly added the reserved tomato juice and reduced it. My grocery store only had sweetened coconut milk. If you can only get the sweetened coconut milk, don't add a whole can. Add a little, stir, simmer, and taste. I added about 1/3 of the can and it was perfect. I wanted my chicken to be fall apart tender, so I cooked it on low heat. I used about 1lb of chicken. After I added the coconut milk, I added about a pound of cooked shrimp, 3 more diced peeled tomatoes (I used 1 14.5 ounce can, plus 3 out of another can), 1 tablespoon of butter, then covered and simmered for about an hour. I was very heavy handed with the garlic salt and the curry. I used hot vindaloo curry paste and some tumeric based curry powder. I also added some cayenne (we love spicy food). The butter added some richness to the sauce, and the extra tomato juice helped give me a nice rich sauce as well. If I had not only been able to get sweetened coconut milk I may not have needed the butter or the extra tomatoes.

Hot Artichoke Dip with Sun-Dried Tomatoes

This tasted really good but was a little greasy. Next time I make it I will substitute cream cheese or sour cream for some of the mayo to cut down on that. I think I would like more sundried tomatoes in it as well. I did add some minced garlic and that worked well. I used the marinated artichoke hearts and liked the extra flavor.

Dip For The Stars

This was really freaking good!! I have made several times now and everyone has loved it, it is always gone and I always gets lots of requests for the recipe. I usually use vodka but last time didn't have any and used red wine vinegar and that was good too.

Homemade Chicken Fettuccine

This came out tasting very good. I added some extra garlic, but I do that to everything. I did have some trouble with the sauce thickening, I finally had to add some flour. But it came out really well. Doesn't reheat too well tho, the sauce kinda seperates the next day, but still tastes pretty good.

Brown Sugar Chops

I thought this was really good. I didn't have any soy, so I used a little hot sauce and some balsamic vinegar with the butter an brown sugar. I also added some garlic. I mixed the butter, brown sugar, hot sauce and balsamic vinegar together and marinaded the pork for about an hour, then cooked. It came out really tender and not too sweet at all.

Swiss Vegetable Medley

This was REALLY GOOD. I used a frozen bag of broccoli, corn, and red peppers as the veggies (I'm not big on cooked carrots). Next time I think I will add a little crushed garlic. This was so good that my two roommates and I ATE IT ALL in one sitting. You've got to try this, it's really good.

Better Than Sex Cake II

I took this to a party yesterday and the WHOLE thing got eaten. Everyone was asking "who made that cake?" and asking me what was in it. I used 4 skor bars, 3 on the cake and 1 on top of the cool whip. BTW, for the people that said the whipped topping melted, use cool whip, not the whipped topping out of the spray cans. The cool whip won't melt.

Dill and Shrimp Salad

This was awesome. I mixed together the shrimp/celery/green onions (added extra green onions cause I like them) and then added the lemon juice and lime juice. I didn't measure how much I added of each, just tried to keep it at lemon:lime 2:1 ratio in the original recipe and didn't add enough for it to get soupy. I also added some crumbled feta cheese and some halved grape tomatoes. I scaled it to feed 4 and then served it as a side dish for 5 people, we ate it all. I served it with Hawaiian sweet rolls and pita bread. I liked it best on the hawaiian rolls, but it was good on the pita too.

Fish Tacos

Yum Yum this was great! I added some onion powder and garlic powder to the batter and used a little more salt than called for. Used extra cayenne in the sauce but I am a fan of spicy food. These were really good! I just tried this using the Maple Salmon recipe from this site as the fish (not breaded). It was delicious. Everyone especially loves the sauce. Make sure you heat the corn tortillas up well. Everyone especially loves it with the Maple Salmon.
