Watergate Pie

I modified the portions of this recipe quite a bit, and actually used it to make two very different pies. I used the whole recipe of the white bottom, and half in a graham cracker crust and half in an Oreo crust. I used 1 pistachio pudding and 1 chocolate pudding and put the pistachio in the graham cracker crust and the chocolate in the Oreo crust. Topped the Oreo pie with cool whip and Heath Bar crumbles, topped the pistachio pie with cool whip mixed with chopped up cherries. They're in the freezer right now, interest to see which will be more popular tomorrow!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

I frozen the cookie dough overnight. I didn't have full cookies, but only the slightly larger balls stayed gooey. They were good tho and no dryness issues. They all got eaten and everyone liked them... They just weren't as outrageous as I had hoped.

Creamy Chocolate Frosting

I thought this was ok but my friend loved it. I did need to add more confectioners sugar. But it was for sure better than the store bought stuff

Antipasto Squares

These were so good! I made some updates based on the reviews and what I had, but I bet the original is amazing too! 1. Like most people suggest, I partially baked the bottom. 2. I topped the bottom crust with 6 slices of cheese - 3 Swiss and 3 Muenster. I had this multipack cheese thing. I'm a huge fan of Swiss, but I actually think the Muenster pieces were tastier. 3. Put a layer of sun dried tomato pesto over the cheese. Next time I will add a second layer of sun dried tomato pesto between one of the meat/cheese layers. 4. Sliced up the salami and pepperoni a little (didn't both slicing the ham) so I could cut it into squares easier. 5. After crust/cheese/pesto I layered salami, then ham, then some shredded pizza cheese (I didn't buy enough cheese and that's what was in the fridge), then pepperoni, 3 slices of provolone (I will use 6 next time), diced (blotted with paper towels) red peppers and then egg/black pepper/Parmesan mixture, to which I added a little garlic powder. (I totally forgot to buy Parm and my mom had some of the wretched green can stuff in the fridge that I used.). I only poured egg mixture (3) inside and did not use any as an egg wash. It was freaking delicious. I served it as lunch and we had to stop ourselves from eating until we were uncomfortable. I was worried about greasiness/saltiness, but it was neither. I purchased really good quality deli meats which I think helped a lot.

All-American Chips and Dip

To me this is more of an idea on how to cutely present chips and dip than really a recipe. That being said, it was very cute and looked good at our 4th of July party. Instead of using the ranch dip, I mixed up a vegetable dip. (I also had a 7 layer dip that included ranch dip).

The Best Garlic Bread

I changed this a lot, but I have it 5 stars because the basic idea is good and I never would have thought of using mayo on garlic bread if I hadn't seen this recipe. I made this twice this weekend. The first time I made it, I used my normal recipe and also made a variation of this one cause I was scared this might be weird. (I mixed about 1 1/2 tbs butter with garlic, spread on bread and lightly toasted. I then spread the mayo/fresh minced garlic/Parmesan/italian seasoning mixture over that and broiled until it was nice and brown and bubbly.). We both liked the bread with the mayo topping the best with our chicken parm. The second night I used my leftover marinara for chicken meatball subs and made them on garlic bread using the mayo topping again. They were seriously to die for. One of the best sandwiches I have ever had. Give this a shot, but I do suggest fresh garlic and letting the mayo mixture's flavors combine for a little while.

Party Pinwheels

I was very skeptical about this recipe, but the glowing reviews convinced me to give it a shot for a party. I skipped the celery and onion and just used the bell pepper and 12 diced olives and about 1/2 a block of smoked cheddar, shredded. I mixed the ranch, cheese and diced pepper all together with the cream cheese. Then I sprinkled with the diced olives (I used Kalamatas so I didn't want it to be overpoweringly olive-y). Rolled them up in the foil and actually left them in the fridge for 2 days before I used them. Sliced them up about 1/2 hour before serving. Got lots of compliments on these. I was afraid of soggy tortillas, but that was a nonissue. I will use these for parties again. They are popular and easy.

Hot Fudge Ice Cream Bar Dessert

This was an enormous hit at an office party I brought it to. I used a total of 16 sandwiches. I put down a layered, spread the natural peanut butter right on top, then drizzled chocolate syrup, then another layer of sandwiches and froze it in a Tupperware container. Just before I served it I turned it out onto a platter, iced it with cool whip and drizzled it with more chocolate syrup and crumbled butterfinger. I iced the sides of it with cool whip too, and you could not tell it was ice cream sandwiches. When you cut it, it looked like an intricate layered dessert. People went nuts for it, there was not a bit left. I even had people asking me where I bought it and others were like, "wow how did you do that?" It totally cracked me up knowing how easy it was. It took about 10 minutes, I made it right here in the office kitchen.

Meatballs and Sauce

Swiss Chicken Casserole I

Really really easy. As in assembled in 5 minutes easy. And well received. My only change was some black pepper. Only changes next time will be subbing white wine for milk, using the low sodium soup, and throwing some garlic and poultry seasoning on the chicken.

Never Enough Green Bean Casserole

I made this for a potluck at work today. It was the first dish gone and several people mentioned to me how much they enjoyed it. I did make a few changes. I left out the bacon because we have a lot of people that don't eat pork. And stupid Whole Foods does not carry velveeta, so I ended up using pimento cheese in it. That was surprisingly good! I doubled the recipe but used 5 cans of beans. It was plenty creamy, I can definitely see where some of the comments about being too much sauce are coming from. I did mix some French fried onions in with the casserole as well as topped it with them. I threw everything together in a crockpot when I got to work and came back to stir it every 1/2 hour or so. Really pleased how this came out in the crockpot.

Jenn's Out Of This World Spaghetti and Meatballs

Meatballs were GREAT. BUt the sauce was too sweet and too bland. I had to doctor it up a LOT and add extra water and more crushed tomatoes to mask some of the sweetness (and I didn't even use all of the sugar). Then I still had to throw in a lot more garlic and other spices. The meatballs are a keeper, but I won't be making this sauce again.

The Best Bacon-Tomato Dip

This ended up being very tasty, but I added garlic, onion powder, cracked black pepper and ranch dip mix. I added more bacon than called for and would add even more next time. It ended up being very tasty, but it would have been bland without the additions.

Pesto, Goat Cheese, and Sun-dried Tomatoes Quiche

Our only complaint was that the 30 minute cook time was too high. After 19 minutes I pulled it out and part of the crust was a little burnt. I had no problem with the bottom crust being soggy. I used more goat cheese than called for And added some garlic. It was delicious (even the piece with the burnt crust.

Nutty Coconut Fish

This was good and very moist. It would be hard to mess up fish cooked this way. I will make it again,but I will tweak it. 1. Dijon mustard instead of brown. It didn't have the kick we were looking for. 2. A lot more coconut. I wasn't getting coconut at all.

Sour Cream Cucumber Salad

I made this last night and am still thinking about how good it was. I did change up the prep a bit. I let the cucumbers drain for about 30 minutes (next time I will do this overnight) and then let them swim in a rice wine vinegar bath for about 30 minutes. I didn't rinse off the salt before throwing the cucumbers in the vinegar. I mixed together the sour cream, green onions, 2 teaspoons of minced garlic, black pepper, and 2 teaspoons of rice wine vinegar while the cucumbers were draining/marinating. Then I removed the cucumbers from the vinegar, blotted them dry again, and mixed them with the sour cream. I added some paprika on top. It was delicious. Served it with the spicy salmon with caramelized onions recipe from here.

Spicy Salmon with Caramelized Onions

We kicked up the spice level on this a little and really enjoyed it. It was great on salmon BLTs the next morning too. If you can find Edmond Fallot Provencal Dijon Mustard, that is FANTASTIC in this recipe. The first time I made this recipe I really liked it, but we loved it when we used the Provencal Dijon.
