I live in a small rural town in western Nebraksa. I live with my teenage daughter and work full time. I enjoy cooking, but because I work full-time and evenings 2-3 times a week, I like quick and easy.
My favorite things to cook
I love to bake, but unfortunately, I also end up eating it all myself, so I don't bake often. I like to try new things, and new ways of cooking. I love to make single dish meals, not necessarily a casserole, but things that can be cooked in the same pot.
My favorite family cooking traditions
As I was growing up we ate fairly plain foods--basic mid-west diet. Meat and potatoes at every meal and some kind of vegetable usually green beans, corn, or peas. Lots of vegetable beef soup and chili in the winter.
My cooking triumphs
I love adjusting old recipes and making them even better than before--one of my favorites: Jo's Clam Chowder. I also cook on a limited budget, so I really get a kick out of coming up with something that tastes good, is good for you, and is inexpensive.
My cooking tragedies
Thank God for Betty Crocker 40th Anniversary Cook book. I bought it about a year after I married. Before that, I made the nastiest gravy ever made. I learned how to make a white sauce, and since then gravies and sauces have been easy, tasty and sucessful.
