Easy Indian Butter Chicken lower fat

Spaghetti Pizza I

This was okay, but I wasn't wild about it. Hubby commented that I could just cook pasta and top it with red sauce, cheese, and pepperoni and it would taste about the same. Not worth making again for us.

Homemade Black Bean Veggie Burgers

Will make again. They were a bit difficult to shape and cook (and flip) since they were so soft so I may want to oil the pan a bit more next time. Hubby really enjoyed them. :)

Salsa Chicken Rice Casserole

Yummy! I made this almost exactly as directed. I used medium salsa instead of mild (because that's what I had on hand), and cooked the rice in my rice cooker according to the directions for using it. Leftovers were also yummy!

Broccoli Chicken Divan

Will definitely make again. Only changes I made were to use cream of chicken soup (I had it on hand), colby-jack cheese (also on hand), and I steamed the broccoli instead of boiling it. Very yum. Didn't find it too bland at all. I do want to try it with some curry powder another time, however, for something different.

Roasted Curried Chicken with Couscous

DELICIOUS! The only changes I made were to use bone-in chicken breasts instead of a whole chicken (because that's what I had), and I was out of onion powder so I used dried onions. I also reduced the cooking time somewhat because of the breasts. I cooked them for an hour, but they probably would have been done in about 45 minutes. The seasonings in the couscous weren't too strong, so they complimented the chicken, and didn't seem too much of the same. I will DEFINITELY make this again!!!

Best Ever Chocolate Cutout Cookies

This was okay. I was a bit dissapointed by the results. My first batch I cooked exactly as it said, and they ended up being slightly burnt. My second batch I cooked for 6 minutes, then only left on the tray for four, and they were much better. I might make these again, but I'll probably just stick with my regular sugar cookie recipe. UPDATE: Okay, maybe spoke too soon... The next day, the cookies had softened up and were chewy and much tastier. Still not my favorite cookie, but much better than I initially thought.

French Crepes

This was an easy recipe for beautiful, paper-thin crepes. I made them for breakfast today, with fresh strawberries inside and a sprinkle of powdered sugar on top. Delicious!

Lemon Orzo Primavera

Yummy! We had this for dinner as a side for the Honey Grilled Chicken also on this site. We will definitely make this again! The only change we made was to put a squeeze of juice from the zested lemon.

Baked Teriyaki Chicken

Yummy! I will definately make this again! The sauce was pretty gingery before it was baked on the chicken, but then it was fine. Took the advice of another reviewer and lined the pan with foil--helped a LOT with cleanup!

Spinach Stuffed Chicken Breasts

I made this almost exactly as given in the directions, and it was wonderful! The only change I made was to cook it for slightly less time--after 50 minutes, my meat thermometer tested it as "done." Didn't find it to be too greasy at all. Will definitely make again.

Portobello Bellybuttons

Will definitely make this again! My mushroom-loving husband especially enjoyed this recipe! I did make a couple changes, however (as seen in the picture I'll be posting). I got mini ravioli, because I found some for a good deal. Also, instead of using 1/2 lb button mushrooms, I used a mix of white and crimini mushrooms. And, since I don't have wine, I used chicken broth instead.

Renaissance Stuffed Mushrooms

Just made these as a main dish for dinner tonight--Yummm! Followed a couple of suggestions--added breadcrumbs (which added a texture I liked), and didn't saute the mushrooms before putting them in the oven. I also dipped the mushroom tops in olive oil on the outside to keep them from drying out in the oven. The garlic flavor ended up being a bit strong, so I think next time I'll follow another suggestion and saute the stems with the garlic and green onions.
