Years ago I checked out some cookbooks from the library.  Among them was Paul Prudhomme's "Fiery Foods that I Love".  I copied his recipe for Spicy Beef Stew.  I made it several times according to the original recipe.  It's really, really good but I always found that if we… MORE

I don't look to individual cooking tragedies but rather to trends. I need to remind myself that a lot of recipes that seems like it will have a ton of flavor but that have a short cooking time (with little or no marinating) will likely be a dud.

Onion Roasted Sweet Potatoes
At the last minute on Thanksgiving, I ran to the store for sweet potatoes and made this. I used olive oil instead of vegetable oil. What a great quick, delicious side dish! I used 4 lbs of sweet potatoes but didn't change the amount of soup mix or oil and they were perfect.

E-Z Marinated Swordfish
I marinated this for 24 hours because we didn't eat it when I originally planned but it turned out great. I pan-fried it in a nonstick pan. My husband and I both think it's a winner. Next time I would up the cayenne for more of a kick.

Supreme Strawberry Topping
Super-easy to make. I was amazed how cooking the strawberries in sugar yielded so much liquid. I used a pound of fresh berries and would cut back the sugar a bit next time. Hubby said it was delicious; served it over waffles.
