Lentil Soup
SO GOOD! I make huge batches of this in the crockpot and freeze small portions for lunch. Still delicious, even after freezing. I only make a few minor tweaks... I omit the oil, use an entire bag of lentils that I soaked overnight in the fridge in cold water (then drained before using), add 4 vegetable bouillon cubes with the water (start with only 4 cups), and I realized I've been using the large 28oz cans of tomato, I also use a bag of frozen spinach for convenience. The seasoning is perfect though, don't mess with that (ok, maybe a little extra garlic), and ABSOLUTELY be sure to add apple cider vinegar on top when serving - THAT is what makes it outstanding. A little parm also makes it extra yummy, but unnecessary.

Taco Seasoning I
Perfect! I make large batches and use it often. I especially love it on black beans for tacos.

Refried Beans Without the Refry
Perfect, easy, healthy, better than canned! I make this regularly in large batches, freeze it, always have some on hand for quick meals. The only change I make it I soak the beans overnight, use a little more cumin, and jarred pickled jalapenos with some of the juice instead of fresh. so good
