Tropical Ice Cream

i made this just after i got my wisdom teeth out so i made some alterations. I also only had 1 cup of heavy cream and do not like pineapples. 1 cup whipping cream 1 1/4 cups 2% milk 4 tbsp coconut milk powder 1/2 pkg lemon pie filling 3/4 cup sugar 3 mashed bananas if i wasn't on a soft-food-only died, i would have used less coconut powder and added the flaked coconut and walnut pieces. I was scared the frozen banana slices would be too hard, so i mashed them, however i will probably just slice them the next time i make this recipe. I'm giving this 3 stars as it gave me a good start, however i made quite a few alterations to the recipe.

Scalloped Potato-Onion Bake

I had a can of cheddar cheese soup, so i used that instead of cream of celery. i cooked the potatoes in the microwave half way so i only had to bake for about 45 minutes.

Tropical Sweet Potato Fries

I found these to be too salty for my liking. I found them to be a bit mushy after taking them out of the oven, so i put them in the frying pan (with some non-stick cooking spray, as to not add any more oil) for a few minutes on high heat to crisp them up a bit. they were still a bit mushy, but tasted fine other than too much salt. next time i might bake them at a higher temp for a shorter time to make them more crispy. i also served them with some sour cream with some peprika and chili peppers mixed in.

Gingerbread Men

my cookies expanded so much you couldn;t tell what shape they were! I only put 8 on a tray and they ran together to much that it was basically just one big gingerbread square! I was making these for dessert plates to give out for christmas, so i just cut the cookies into squares and iced them and used gingerbread man shaped sprinkles that I had. they tasted fine, however, and it was a good way to use up my sprinkles that i had no idea what to do with! for the rest of my dough, i flattened it out into a pan and made squares as well. i don't like molasses at all (the smell, taste, texture, anything) so i refuse to cook with it, so i was happy to find a gingerbread recipe without mollasses. i loved the taste of these!!

Quick Quiche

Even though I had pie crust, I loved the idea of using cheese and bacon. I used store bought bacon pieces and layed them first and then shredded cheese on top, figured it would be less messy when cleaning up. I cooked celery, tomatoe, onion and yellow papper before hand and shredded a carrot, as well as used some leftover ham. i crumbled cheddar cheese to mix in with the eggs, and used a salsa cheese for the crust. My brother who usually doesn't like quiche was forced to try it, and even took seconds!!

Buttercream Icing

i used all butter, and substituted about 1/4 of the icing sugar for brown sugar (and added a dash of corn starch). i never measure my vanilla, so i'm not sure how much i put in, but i know i added extra. this icing is so buttery and creamy. i love it! although the brown sugar gave it a mocha color, it colored easily with food coloring. This time, I am making a jack-o-lantern cake, but if i were to use it for a normal cake/cupcakes, i wouldn't use food coloring at all! the color was quite nice.

Christmas Cookie Cut Outs

I only made a half batch of the icing as I had some leftover icing in the freezer. However, the half batch was enoug to ice all of my cookies. I found the cookies to be slightly tasteless, so I sprinkled a mixture of cinnamon, nutmeg and white sugar on top of the icing and that seemed to make them ore tasty.
