Pollo Fajitas

I like this recipe. The first time I made it I followed the recipe exactly. The second time I made it I used some pointers by other people. I added juice of 1 lime in the marinade. I also added a teaspoon of cumin and 1 tablespoon of Texas Pete's Hot Sauce. I'm sure I'll use this recipe again.

Spicy Italian Pork Cutlets

I had pork cutlets and a hungry spouse... I found this recipe and within the hour I had a delicious meal. I made the recipe exactly as written and the pork was moist and flavorful. Thankfully I had leftovers in the fridge of boiled yuca and cabbage salad to serve as sides. Somehow it all worked. I will make this pork again.

Eggplant Parmesan II

This recipe was a complete success! Everyone loved it. I had to pre-bake my eggplant longer than 5 min each side as directed. I did 15 minutes on each side because my eggplants were cold, right out of the refrigerator. But other than that I followed the directions exactly and I'm really happy with this recipe and I will make it again.

Honey Baked Chicken II

Our family favorite! The first few times I made this exactly as the recipe directed and it was really good. Now I made it with a few adjustments and its AMAZING. First I use 2.5 tsp of curry and I totally eliminate the butter and in its place I use 2 tbs of olive oil. In addition I crumble up one of these 4oz tubes of goat cheese with herbs, usually the brand President, and add it to the mix. I add my clean/washed chicken to the mix of curry, salt, honey, mustard (I use Grey Poupon Dijon) and goat cheese and put in all in a Ziploc bag and let it marinate overnight. Then I put all the ingredients in Pyrex dish and add cubes of Feta cheese, about 100grams. I make sure to poke the feta down into the sauce so they don't burn. I like to have enough of the honey-mustard mixture so that the chicken is almost covered and there is enough sauce to add on top of the rice or couscous when serving.

Jalapeno Popper Spread

Like everyone said... it was a hit! I baked it at 400F for 20 minutes in a round Pyrex and topped it with a mixture of Panko breadcrumbs and freshly grated Parmesan cheese as others suggested.

Pork Chops and Sauerkraut

This was sooo good! I followed the directions and proportions as directed except for the caraway seeds - but only because I didn't have any. Still turned out amazing. This is a keeper.
