Enchilada Sauce

This sauce was awesome. However, I am giving it 4 stars because I was totally blind sided by the heat. Five tablespoons of chili was way too hot for me (and I like spicy). I thought I would go into cardiac arrest for a minute there :). This recipe with 5 tbl spoons of chili is for those who want their tongue ripped out! I had to make a whole nother batch using no chili powder. I then combined the two batches, which came out perfect. I'll freeze the extra for next time. There should be a table guide for spicy levels.

Perfect Baked Jerk Chicken

This chicken came out great. Added a little water as another reviewer suggested, just to thin the soup out a bit. The only problem I had with this recipe is that the flour batter becomes so thick, which was wonderful for dinner (nice and crunchy), however this recipe did not serve well as left overs. Once all the crunch sits overnight in the frig, it turns thick and gooey.

Teriyaki Chicken

This was absolutely awesome! I made a few changes. I added a 1/4 cup of pineapple juice (as one of the reviews suggested), and I used brown sugar. I didn't have enough time to allow the chicken to marinate for three hours. I cooked it after an hour, and the chicken was still full of flavor (next time, time permitting, I'll marinate longer). I cooked it on top of the stove using some of the marinade. I used chicken thighs, and cut it up for a chicken teriyaki salad. This so so so good. I'll be preparing this again very soon!!!

Chinese Chicken Fried Rice II

Very tasty dish. Found it to be cumbersome putting it all together. I took the advice of letting the rice get cold. However, I think I overcooked the rice. The finished product was a bit mushy. Although, very tasty. Will try this recipe again.

Fresh Peach Cobbler I

This pie was just alright. I loved the filling, but wasn't crazy about the biscuit like crust. I personally prefer a flakey crust. My fault, I should have realized it by the ingredients. If you love a biscuit top, you'll love this pie.

Sweet Potato Pie I

This pie was the bomb!!!! (delicious). I was very surprised since it was so simple to make, and didn't call for the loads of ingredients that I ususally use. My family loved it. I made two 2-weeks ago, and I'm preparing to make two more for dinner tonight. I will diet tomorrow :)

Neck Bones and Lima Beans

I've been cooking great dishes for the past 30 years, and I have to say without a doubt, this is one of the best country meals I have ever had. I didn't have dry limas, so I used a frozen pack I had in the freezer, and waited until the neck bones were tender before adding them. I was concerned about how I would like the sage and netmeg, but they weren't overwhelming in flavor, but mildly blended in with everything else. This is a keeper!

Washabinaros Chili

This chili was the best I've ever tasted. I'm not a chili fan. Made it at the request of my husband. The consistency and flavor was awesome. Next time I will cut back on the heat (peppers). It was a bit too spicy for me. Great recipe!

Mushroom Soup Without Cream

Great Soup, great flavor. However, I thought there were too many mushrooms. I was really surprised with how much flavor existed, with so few ingredients. I will make this soup again, and again.

Chipped Beef on Toast

Great recipe. My family absolutely loved this. There were no leftovers! However, I did make two additions. I sautéed about a 1/4 cup of diced onions with the butter before adding the flour, and I added three dashes of worcestershire sauce for flavor. This recipes has been inducted into the family recipe book for keeps.

The Best Chicken Fried Steak

I'm not sure what happened, but things did not turn out well. With so many great reviews, I may try this recipe again at a later date. My crust was a bit soggy, not as crisp as I would have liked, plus my steak was very fatty. Can't totally blame the flop on the recipe :)

Baked Spaghetti I

This was great and easy to make. Only a corner left for tomorrow! Mostly followed the recipe. Didn't have mushrooms on hand. Added a little red pepper for an extra kick. This recipe will be added to the dinner rotation :)
