Coconut Crust

I made this crust for a gluten-free coconut pie. Even my gluten eating family thought it was better than a shortbread crust. It was so easy. As another reviewer suggested, I put the ingredients in the food processor before pressing into the pie plate and baking.

Oven-Fried Catfish

I followed the directions exactly, but these just didn't turn out for us. The spices were fine, but the texture was nothing like fried catfish. Too bad, I was looking for an easier way to "fry" catfish.

Sweetened Condensed Milk

I used this to make sweetened condensed milk for a key lime pie. I used goat's milk (because some members of my family have a difficult time digesting cow's milk). It worked great and tasted just like the real thing. I will definitely be making my sweetened condensed milk again. Very easy.

Peanut Butter Balls I

Chocolate Chip Banana Muffins

My gluten-free version came out great! I made these muffins with King Arthur Gluten Free Multi-purpose flour and they were delicious. I used two medium size bananas and added about 3/4 cups of walnut pieces. The kids loved them and so did I.

Greek Salad

Loved the combination of ingredients. To save time and because everyone likes a different dressing at our house, we used bottled dressings. Greek Vinaigrette and Ceasar both went very well with this salad.

Honey Ginger Carrots

Excellent and easy recipe. I made it just like the recipe said, only I used baby cut carrots straight out of the bag. My kids, who don't usually like cooked carrots, loved them and so did my husband. Super Easy! (I also used less than 1/2 the amount of butter, and we didn't miss it at all).

Flourless Chocolate Cake II

This recipe is so simple and so delicious and completely gluten free. Anyone can make this. If you want to add a bit of a change to complement coffee or ice cream you can add a little flavoring. I added 1/2 teaspoon of almond extract. I'm making it again for a special dinner and adding hazelnut extract this time.

Corn and Black Bean Salad

I made this according to the directions and I loved it. My husband and kids thought it was a bit strong, so next time I'll cut down on the balsamic vinegar a bit for them, but it was perfect for me. I love the tangy taste. I might add some sweet onion next time as well.

Roasted Brussels Sprouts

These were excellent. I am not a brussel sprout fan, but my husband is, so I made this recipe for him. Surprise, surprise -- I liked them and my two sons liked them as well. I will definitely make this again. Super easy too!

Minnesota Wild Rice Dressing

My family loves this dish. I often use a locally made pork sausage without the sage and just a some dried sage. I've made the recipe without any changes and it is great. I've also substituted canned mushrooms and added other vegetable I had on hand. It was just as good. Try spinach, bell peppers, or chopped broccoli. So easy to make and great for using up leftover fresh veggies.

Gluten-Free Peanut Butter Cookies

I've made these twice now and my family absolutely loves these cookies. They cannot believe there is no flour in them! I do have to cook them a bit longer to get the centers thoroughly cooked, maybe my cookies are too big. Still they are delicious cookies (even if you can eat gluten).

Chicken Piccata with Artichoke Hearts

I made this last night and I even doubled the recipe so I'd have leftovers for my hungry boys. Well, they all went back for seconds and I have a lot of full bellies, but no leftovers. I'd say it was a big success. I don't think I've ever had so many requests to make it again.

Cherry Pie

I've made this several times and it is always a hit (and super easy too). I make this with a gluten-free crust (store bought) and it is still delicious. You do need to use tart cherries just as the recipe says. Always gone the same night I make it.
