Slow-Cooked Pulled Pork Shoulder

Easy and delicious, one to repeat. One doesn't need to use as much fluid as specified if the marinating bowl is small enough, just enough fluid to immerse the pork.

EAGLE BRAND® Frozen Peanut Butter Pie

Amazing but I used 1 Tbsp each vanilla and lemon juice and bumped the amount of pnut butter to one full cup. I'd try 1 tsp lemon juice. The finished product is hard to cut, so next time I'd line the pie plate with wax paper below the rice krispy chocolate mix pie crust. Then pull the waxed paper off, put the pie on a cutting board, and cut the pie with bash n chop tool.

Ham Bone Soup

I rated it highly for easy preparation and delicious GF soup. I put in drained can of black-eyed peas because I didn't have kidney beans and threw in fresh basil chiffonade and fresh oregano because I grow these. Also added about a tsp garlic salt. I used 1 qt plus one can chicken stock and not the water and bouillon. This is a good fit for this first chilly day in the Detroit area. Thank you, this is one of the best uses for a ham bone I have run across.

Angela's Awesome Enchiladas

Since this is what I had on hand, I used a mix of pepper jack cheese with cheddar, and not the full amount. I started with a rotisserie chicken from Costco, skinned and removed bones. Shredded the chicken with a HAND MIXER :-) I'm gluten intolerant so I used corn tortillas and GF cream of chicken soup. This is a keeper and would be a crowd pleaser.

Chicken with Artichokes and Goat Cheese

Flavorful and hearty with mashed potatoes. I liked it more with garlic powder sprinkled on top. Next time I would throw small whole mushrooms in to cook the last 15 minutes.

Bean Soup With Kale

Better than I expected. It was quite flavorful given the simple ingredients and relatively easy to make. I will consider doubling and freezing half next time. I'm not experienced with kale so I did not include its thick ribs.

Zucchini and Potato Bake

Outstanding. My husband and I alone ate most of this, which was supposed to be enough for 6. I omitted the bread crumbs and sprinkled on rosemary instead of paprika, omitted pepper.
