Summer Lasagna

Great way to use up the zucchini I had growing in my garden! I was worried the lasagna was going to be a bit bland, but it was very flavourful! The only thing I didn't like was that the dish turned out quite watery -- I would suggest cooking the tomato sauce down until it is quite thick, and maybe using dry curd cottage cheese. Definitely would make it again.

Pico de Gallo Chicken Quesadillas

Simple and fantastic! I make this at least once a month! (I use mushrooms instead of bell peppers, and you could easy vary the recipe depending on what vegetables/meat you have on hand.) As someone else mentioned, the Pico de Gallo really makes the recipe (I make mine without cilantro or chilis and add hot sauce to the quesadilla instead).

Easy Olive Oil, Tomato, and Basil Pasta

A keeper! The variations you could make on this seem endless, and I had all the ingredients on hand. I made some modifications: spaghetti noodles; instead of roma tomato, package of crushed tomato; doubled the garlic and sauteed the garlic along with some onion in the olive oil before simmering with the crushed tomato, and added the fresh basil at the end. I sliced some mild cheese on top of the pasta before adding the warm sauce on top. Delicious!

Banana Crumb Muffins

I usually make banana bread with overripe bananas but I decided to make muffins instead this time. These were only OK - tasted fine, but don't think I'll make it again. As a few others mentioned, it was a little too sweet, and a bit bland compared to banana bread. This is despite the fact that I made some changes following other reviewers, like adding more cinnamon, vanilla to the batter, reducing the amount of sugar, adding an extra egg, and adding the topping 5 mins prior to finishing. I also didn't have baking soda so I substituted 3x baking powder, and I substituted white sugar for the brown sugar topping.

Easy Masoor Daal

I rate it 5 stars, but only with changes to the recipe. I modified the recipe on the advice of some other reviewers. I bumped up the tumeric to 1 tsp, used 3 fresh sliced, deseeded chilies instead of cayenne, butter in place of veg. oil, 1 whole sliced onion instead of dried, and added 1 tsp garam masala. And added 1 chopped tomato. I made the lentils separately first. Then sauteed the onions in butter, added the spices and sauteed 1 minute. Then added the tomato and cooked until soft. Then added the lentils and simmered. For me this only made 2 generous servings, because it was so delicious!

Asian Tuna Patties

So easy and I had all the ingredients on hand (except gr. onions)! I agree that I'm not a huge canned tuna fan, but these were a great way to get some fish in my diet. I added an extra egg, and used DARK soy sauce (light soy sauce can taste really salty). They don't really taste Asian but they're good nonetheless. I think this will be one of my fallback meals for rushed evenings!

Chocolate Pudding Cake II

Delicious and foolproof to prepare! Only 5-10 mins of prep. Instead of 3/4c of brown sugar I used 1/2c of white sugar mixed with molasses and it wasn't overly sweet. Tastes like a lighter version of a brownie topped with a thick chocolate pudding.

Banana Crepes

Made the banana filling (cut into discs) with a different crepe recipe I already love. Very good, tasted like applesauce, only made with bananas! Instead of the half and half I used evaporated milk (to reduce the fat content) with good results. May try making it with half the butter recommended next time to reduce fat further. Instead of whipped cream I topped the crepe with powdered sugar.

Double Tomato Bruschetta

I would not reduce the amount of balsamic vinegar or garlic - tasted great the way it was!! Got lots of raves at the party I attended. Very simple to make, but people will think you slaved over it! Instead of 6 tomatoes, I used 5, and I substituted dried basil for fresh, and served the tomato mixture cold, with no mozzerella on the broiled baguette slices. Before I broiled the baguette slices, I also spread a bit of garlic butter onto the bread. Definitely will be making this again!
