Caribbean Coconut Chicken

I made this for dinner tonight and hubby and I both agree this is wonderful! I did make a couple of slight changes however. I did not put this in the oven as I didn't see the benefit in doing so. I cooked the chicken until nearly done then removed it from the pan. Next I sauteed the vegetables and garlic (used minced as I did not have any roasted) adding the chicken back in when the vegetables were translucent. Last step was to add the entire can of coconut milk and seasonings then let simmer for 15 minutes. I served this over jasmine rice and garnished with some sweetened flaked coconut. The combination of the sweet and spicy was heaven. I will definately make this dish again!

Spanish Moroccan Fish

This is WONDERFUL!! I halfed the recipe and made just as written execpt I used canned tomatoes. Served over couscous with pita bread. I will definitely make this again and again. Thanks for the great recipe Hanna R!

Brazilian Chicken with Coconut Milk

Made this for dinner tonight and we both loved it! I used canned diced tomatoes but other than that followed the recipe to a tee. The chicken was a little spicer than we normally like but the sauce helped to cool the dish down so I will make it the same again next time. Hubby says definitely a keeper!

Pasta Siciliano

I made this for dinner tonight and my hubby and I thought it was fabulous!! I added some chicken that I sauteed with some garlic and olive oil, used kalamata olives and decreased the red pepper flakes to 1/2 tsp. The amount of sauce was perfect and reminded me of pasta we had when we were in Italy. I will be making this again and again.

Corn Chowder

Made this for dinner last night and it was awesome!! I used only 3 c. of water and added 1/2 stick of butter as suggested by others. Served it with some crusty bread and butter. Perfect comfort food for a cold winter day! Even better today for lunch. Definitely will be making this again.
