Zucchini Slaw

Reviewed: Nov. 21, 2012
I liked this recipe OK, and I would definitely make it again. I think I will add some mushrooms and tomatoes, and maybe even black olives to make it more substantial next time. I did cook mine on medium, which made the zucchini brown and the onion caramelize a bit, but I really enjoyed those flavors.

Savory Chicken Sandwiches

Reviewed: Mar. 21, 2011
I loved this recipe although I didn't have high hopes after reading that the flavor was "bland". I was also a little afraid that it would be too salty or have too much flavor. To be honest, I was only looking for a simple chicken recipe with at least a touch of flavor to substitue for processed sandwich meat. I just wanted something to toss in the slow cooker, shred it, and put it away for later. This really hit the spot! It turned into a versatile protein that I have used in quesadillas, paninis, sandwiches, and salads. The first time I made a simple panini, I couldn't figure out what was contributing the flavor, until I realized it was the chicken! I am in love with this recipe and will make again and again and again! I used frozen chicken breasts that I had rinsed the ice glaze off of and garlic powder instead of garlic salt because I am watching my sodium intake. Thank you over and over for this recipe!

Spinach and Sun-Dried Tomato Pasta

This was pretty good, but like someone else said, I expected better after all of the positive reviews. It was much better the next day.

Meatiest Vegetarian Chili From Your Slow Cooker

Reviewed: Jan. 13, 2011
I was skeptical about this, but it turned out really good. I didn't have cumin, so I left that out. I was also out of canned tomatoes, so I put fresh Romas in a food processor. I think next time I make this, I will crumble the tofu. I didn't really like the cubes.

Cindy's Turkey Salad

Reviewed: Jan. 12, 2011
This was AMAZING. I took the advice of another reviewer and omitted the salt. I didn't have celery or fresh jalapenos, so I threw in diced red onion and diced jarred jalapenos. I will be making this again and again!

Slow Cooker Chicken and Dumplings

Reviewed: Jan. 3, 2011
I, like the other posters, made some additions (hence the reason for the 4 stars). I left out the onions and took the advice of others and used chicken broth instead of water. I used frozen chicken breasts, 98% fat free cream of chicken soup, and added a dash of garlic powder, 2 dashes of lemon juice, and some cracked black pepper. Additionally, I did not use canned biscuits. I made my own dumplings using 2 cups bisquick & 2/3 cups of soy milk, which I dropped in about 35 mins before the dish was to be finished (after shredding the chicken). It turned out AMAZING. It tasted just like I remember Cracker Barrel's tasting like. I will absolutely be making this again.

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Dec. 15, 2010
Wow, I was skeptical that this would be something I would like (bc of the ranch dressing), even after the positive reviews. I was pleasantly surprised. This turned out exactly like I wanted it to taste, if not even better! Will absolutely be making this again...often

Zesty Slow Cooker Chicken Barbecue

Reviewed: Nov. 22, 2010
I made this as my first crock pot attempt. It smelled unappealing, but surprisingly turned out well. The only substitution I made was using brown sugar Splenda instead of regular brown sugar. I do think I used too much bbq sauce though (scaled the recipe down to 2 servings), because I had a lot of left over sauce. I will make this again!

Warm Goat Cheese Sandwiches

Reviewed: Nov. 18, 2010
I thoroughly enjoyed this sandwich. I made it on 100 calorie whole grain pita rounds and eyeballed the ingredients. I didn't expect to like the sundried tomatoes, but together these flavors just all worked. I will be making this again.

Broccoli Chicken Braid

Smelled better cooking than it actually tasted. This was just OK. If I tried it again, I would probably leave out the cooked chicken and just use veggies.

Zucchini Parmigiana

Reviewed: Aug. 3, 2010
Wow, I really liked this! I did get in a hurry and screw up (didn't mix the parm & spices in with the dry bread crumbs to dip the zucchini), so I ended up mixing that in with the egg and ricotta. It still turned out amazing.

Zucchini Cheese Garlic Appetizer

This was delicious! I made it as-written. It is casserole-y enough to eat as a meal. I would like to try it next time with some chopped tomatoes or roasted red peppers.
