Sweet Hot Mustard Chicken Thighs

Let me start this by saying that I am not a cook. I ruin the easiest of meals. I did not ruin this meal and my husband was THRILLED with the outcome. The marinade was super easy to make and when I didn't have something on hand (crushed chipotle peppers, for example) I just substituted something I thought was similar (like paprika). So good. We will be making this again and again. Thanks for the awesome and budget friendly recipe!

Thai-Style Peanut Sauce with Honey

I made this as a stir-fry sauce for vegetables over coconut rice (1 cup leftover coconut milk, 1 cup water, 1 cup rice - cook - done) and it was a complete hit! My only adjustment was that I added an extra tbls of soy sauce and upped the 1/4 cup of peanut butter to 1/3 cup. Super delicious and easy meal.

Penne in Vodka Cream

I just made this meal for my boyfriend and we loved it! I modified the recipe slightly. I added garlic to the butter as it melted to give it more flavor and a can of crushed tomatoes with Italian seasoning for texture as the other tomato items were added. I also chopped up about eight fresh basil leaves and added them to the sauce at the end with the parmesan cheese. Next time, I plan on halving the amount of butter used in the recipe to cut back on fat. Overall, this recipe was quick, simple, and really really tasty at the end of the day. It's definitely going into our hearty food rotation.

Fiery Fish Tacos with Crunchy Corn Salsa

These tacos are awesome. So delicious. I do have to second what another reviewer said however, the rub recipe makes far too much -- really, you can halve it. Also, don't go crazy with coating your fish - the first time I made this I about killed my guests with the heat. It's definitely not for the faint of heart. The salsa recipe also makes too much but that's fine by my man. We stored it away and he had it as snack with tortilla chips. Much healthier in my opinion than store bought stuff that's full of preservatives. Also, as a note: I added some homemade guacamole (2 avocados, lime juice, salt, and cilantro mashed together) to cool down the fire from the fish which worked pretty well.

Best of Everything Veggie Burgers

My vegetarian friends loved these when I made them! I made a few substitutions, as we all do, and used baby portobello mushrooms instead of regular, a yellow pepper vs. a green for sweetness, and black beans with chilies vs. regular for extra kick. When making the mixture, I definitely had to work in more than the listed amount of breadcrumbs to get these burgers to stay together... before grilling, I coated each in a light layer of olive oil a dusting of breadcrumbs. It helped keep their shape a little bit better. Awesome recipe!

Raspberry and Almond Shortbread Thumbprints

Awesome. I made these little gems for Christmas and they went over extremely well. I did however, follow some of the tips in the comments section, refrigerating the dough for 20 -30 minutes after it was mixed and then again after the cookies were shaped. As a result, the cookies didn't spread as much and I didn't have any jam disasters in my oven.

Smokin' Scovilles Turkey Chili

I made this last night and it was awesome! I ended up not adding the red pepper flakes (forgot to buy them) and substituting two seeded and chopped jalapeƱos for the habaƱero. I also used a large can of corn as well as a full bottle of beer. The end result was a little more mild than we would have liked (both my boyfriend and I love the spice) but it was still extremely tasty. I will definitely be making this recipe again!
