Sweet Hot Mustard Chicken Thighs
Let me start this by saying that I am not a cook. I ruin the easiest of meals. I did not ruin this meal and my husband was THRILLED with the outcome. The marinade was super easy to make and when I didn't have something on hand (crushed chipotle peppers, for example) I just substituted something I thought was similar (like paprika). So good. We will be making this again and again. Thanks for the awesome and budget friendly recipe!

Thai-Style Peanut Sauce with Honey
I made this as a stir-fry sauce for vegetables over coconut rice (1 cup leftover coconut milk, 1 cup water, 1 cup rice - cook - done) and it was a complete hit! My only adjustment was that I added an extra tbls of soy sauce and upped the 1/4 cup of peanut butter to 1/3 cup. Super delicious and easy meal.

Penne in Vodka Cream
I just made this meal for my boyfriend and we loved it! I modified the recipe slightly. I added garlic to the butter as it melted to give it more flavor and a can of crushed tomatoes with Italian seasoning for texture as the other tomato items were added. I also chopped up about eight fresh basil leaves and added them to the sauce at the end with the parmesan cheese. Next time, I plan on halving the amount of butter used in the recipe to cut back on fat. Overall, this recipe was quick, simple, and really really tasty at the end of the day. It's definitely going into our hearty food rotation.
