Marinated Tuna Steak

This is an excellent marinade for tuna. I grilled the tuna rare and all four of us agreed this could be the best tuna marinade ever. I highly recommned this recipe and only gave it 4 stars because I still have many recipes to try in my lifetime and I could find a better one out there.

Confetti Bean Salad

This is delicious. I took it to a party and everyone who tried it raved about it. People seemed to like eating with chips like a dip. This is perfect for parties since it makes so much. After a while I tossed in some feta cheese which added an extra kick. I may also try it with balsalmic vinegar which I think will add more flavor but I am definitely going to make this again.

Wild Mushroom Stuffing

Made this for Thanksgiving. It was great but is definitely a LOT of work. I goofed up and did not quite have enough egg bread (challah). Seems to help to have extra broth on hand to keep it moist (substituted vegetable broth). Otherwise it was very good and a big hit.

Pumpkin Cheesecake in a Gingersnap Crust

Really good cheesecake. I had trouble getting hazelnuts locally and did not seem to get a fine enough grind once I had them all shelled. this was my first attempt at cheesecake in years and it got rave reviews. Oh my pan leaked a little so I guess I should line the oven rack with foil next time.

Calabacitas

This was good but too much onion for my husbands taste. Feel like it could use a little seasoning too - perhaps next time I will try the chili powder suggestion. I too used canned diced chilis which gave it some kick (that is what I had on hand). Very fast and easy. Good basic recipe that I will make again with some modifications.

Roasted Vegetables

Easy and Delicious! This one is a keeper that I can't wait to serve for company. After reading another review, I also used carrots instead of the squash because its a little quicker. I did not notice how much this made so I will scale down next time and we will be eating the leftovers tonight.

Pumpkin Cream Cheese Dessert

I always hate to give 5 stars because I am sure there is room for improvement. I had to scale the recipe so I think the size of my pan affected the final product but it was very delicious. This is great combination of two of my favorites cheesecake and pumpkin pie but does not weigh you down like cheesecake often does.

Sweet Potato Casserole II

This is my new favorite sweet potato casserole. Very easy and a great alternative to the marshmallow covered kind of sweet potato recipe. we don't really like pecans but they tasted great with the brown sugar mixture! I scaled this down and had a little trouble figuring out how many sweet potatos to use but the flavor came out great!

Creamy Au Gratin Potatoes

This was very good but its certainly not low cal, low fat or low carb! I was not sure whether to use salted or unsalted butter in the cheese mixture so I used Unsalted since the recipe called for adding salt later. It did seem to need more salt after it was cooked. I found that it was cooked within the time listed(though the prep time took longer for me) and I, too, removed the foil 15 minutes before the end. I also found it got a little brown on the bottom (Burnt?) but it was delicious nonetheless. I will definitely keep this recipe as I dont like boxed potatoes because you just don't know what you are getting in the powder mix. My fiance loved it despite the onions (he hates onions).

Grilled Salmon I

I eat a lot of fish and this is one of the best tasting ways to prepare salmon I have ever tried. One word of caution: handle your plastic bag very carefully. I ended up wearing a good portion of the marinade but quickly forgot about the mess after tasting this a few hours later.

Amazing Butternut Squash

This was very good. Had to modify slightly because I did not have enough squash on hand or mayo. Took another reveiewers suggestion and added light sour cream. I was afraid my fiance, who does not like onions, would think it was too onion-y but he ate it up. I will be making this again!

Tender Breaded Turkey Cutlets

I dont know what I did wrong but the breading did not stick at all. Maybe my temperature was off or maybe the turkey needs to be at room temperature before coating. Not sure I will try this again.

Creamy Smoked Salmon Pasta

I had some smoked salmon I needed to use and even though this makes a lot, it was really good. I may have "whipped" the sauce a little too much in an effort to thicken it because the finished product could be a little saucier (does not look pretty after sitting for a while either). I will probably reheat on stove and add more milk to get it back to the right consistency.

Grilled Potatoes and Onion

This was truly great and simple. I sprayed some Pam on the foil first and seasoned everything with a little Sunny Paris or some other seasoning from Penzy's. It was so good that we are making it again today.
