Dog Biscuits II

Dog LOVES these; heck, I ate 3! They're savory, a little cheesy, and quite filling for tiny cookies. I used a half-cup milk instead of the dry milk + water, as someone suggested. Instead of hassling with cooking ground pork, or buying that CRAZY expensive babyfood meat, I used one 3-oz. can of Armour Potted Meat (it's not gonna kill us). Added a handful of grated cheese in with the carrots. Also, I mixed the final batter with my hands, shaped it into balls, rolled gently in flour, and smashed them with a fork like peanut-butter cookies... easier than rolling and cutting if you have limited space. Butter-flavor shortening worked fine, too. I'll make these again.

Sloppy Joes II

I thought I didn't like sloppy joes until trying this recipe -- no lie. I made these only because my fella likes sloppy joes. This stuff is yummy. I will NEVER buy that in a can again -- this is a true staple recipe for us, and SO easy!

Aunt Blanche's Blueberry Muffins

Just my experience (obviously a lot of folks got these to come out perfectly): The batter was SO stiff before adding the blueberries that I had to believe I'd used too much flour -- so I splashed in maybe another 1/4 milk to loosen it up a little. Probably as a result of that, they took forever to cook (over an hour), and came out very very brown on top and just barely done in the middle. So I'd suggest not worrying if the batter looks REALLY stiff before you add the blueberries. I had enough batter to fill 17 jumbo-size muffin cups, and a couple overflowed a little -- I'm baking the last 5 muffins now, and am not sure it's worth another hour of oven time. These are, I think, way too sweet -- UNTIL you get a mouthful with a blueberry, and then you need that sugar 'cuz my blueberries were sadly VERY tart. All in all -- too much work and mess for an unsatisfactory batch of muffins.

Beef Nacho Casserole

I had problems with this one. Added onions with ground beef. Drained that and added the salsa, Miracle Whip/sour cream, corn, and spices and... it was downright soupy. I finally had to thicken the mixture with flour before layering it. Nobody else had this problem? Maybe the salsa was too watery. I'm gonna do this with taco seasoning next time -- the chili powder wasn't enough. Mixing chili powder with the cheese was good, though. My fella REALLY liked this.
