Award Winning Soft Chocolate Chip Cookies

I've made these cookies twice; the first time I followed the directions and recipe with the addition of 1/2 t salt and 2 t baking powder as some other reviewers suggested, and I thought they were great. I tried taking them out just before they looked done and also leaving them in until they looked done and my preference is the more well-done option, though they're both good and soft. Great flavor. The second time I made them I experimented a bit and used one package of chocolate pudding and one package of cheesecake, and put chopped macadamia nuts in instead of chocolate chips. I also used 1 cup of packed Splenda brown sugar blend (1 cup Splenda = 2 cups sugar in sweetness, and the brown sugar blend has a little bit of a white sugar taste, so I used it for all the sugar and didn't add any regular white sugar). The flavor is nice, but the texture is dry and crumbly. If I knew more about cooking with Splenda I probably would have been able to avoid that - maybe I should have added some extra moisture. My rating of 5 stars is based on the first time I made them.

Pasta Shells Florentine

I didn't prepare this recipe as is, but I rated it a five anyway because it served as a great starting point. I read a number of the previous reviews and decided to alter a few things myself. I added some sauteed onions, garlic and carrots to the cheese mixture, and only used about a third of the Italian seasoning. I also completely forgot the egg whites, but that didn't seem to be a real problem. I also used a canned spaghetti sauce with added browned ground turkey. My family all really enjoyed it, and everyone was excited to have leftovers to take to work tomorrow for lunch. I made enough for 8 servings, and served 5 - it looked like we had about enough for 3 servings left, so I would say it's a pretty accurate representation of yield. This is definitely one that we'll make again.
