Balsamic Baked Tilapia

One of our favorite new recipes - especially now that we are eating healthy. My husband said this is the best meal I've ever made. (I don't know that I necessarily agree with him...but I do think it's delicious!) I did not make any adjustment to the recipe - except loosely wrapped in aluminum foil b/c I did not have a bag.

Fiesta Fry Pan Dinner

Absolutely delicious - it was hit with my friends and family! I think the pan was literally licked clean. :) Only change I made was to add more taco seasoning, and I did not have instant rice so I added 1/2 cup of Uncle Ben's brown rice and let it simmer for about 20 mins. SO GOOD!!
