Amish Breakfast Casserole

This was very good... I used a package of vegetarian breakfast sausage, and added an extra egg. I also only used two cups of cheddar and half of on onion, and it still turned out great. Thanks to the Amish!

Addictive Sweet Potato Burritos

I made vegan versions of these burritos tonight. A few of my friends stopped by and all agreed they were delicious. I read a few reviews and followed various pieces of advice. One was that I added the spices to the onions as I cooked them. I also added some corn, and used black beans in place of kidney beans. Mashing the blackbeans in the can made it easier. I added a few tablespoons of nutritional yeast flakes, and a little extra soy sauce and mustard. I served them with salsa and froze the rest for later! Really good, filling, and easy.

Tofu Quiche with Broccoli

This was good! I made my own crust (1/4 olive oil, 1/4 cold water, 1 cup flour, and some salt) and omitted the cheese and nutmeg, as I don't eat cheese and don't care for the latter. Next time I will add more of all the spices. I also just mashed it up with a fork because I couldn't find my blender. It looked pretty egg-y so maybe that would solve the texture problem for some. Good for vegans- especially with some nutritional yeast flakes!

Fava Bean Breakfast Spread

I modified the ingredients to what I had on hand. I used black beans and salsa in lieu of fava beans and chopped tomatoes and onions. I think the fresh lemon is important, so I wouldn't leave it out (I'm lucky enough to have a lemon tree in my backyard). I ate it as a dip and a burrito filling. I think it would be really good with avocado too!

Baked Kale Chips

These are so good. I prefer them overcooked a little, as they don't store too well if they are chewy. I baked them at 300 for about 15 minutes. I also just sprayed parchment paper with canola oil, then sprayed the tops of the leaves as well. I added some cavendars salt free seasoning. Make these in bulk, because they disappear quickly.

Better Peanut Butter Sandwich

I found myself using applesauce with cinnamon on top as a dip for the sandwich. To get the correct applesauce to peanut butter ratio, the dipping was needed. Apple sauce sandwich au jous? This would be good for kids and it was a nice change from my typical peanut butter/banana, which usually fills me up a little too much. I used Ezekiel bread, which tends to stay very crunchy when toasted and prevented any sogginess from the apple sauce.

Sugar Spiced Almonds

People go nuts........ for these almonds. I got a request for more of these the day after I made some for my parents. I made another batch, two days later they are asking for more. These are really good. I didn't have red pepper flakes so I omitted them- still great. I also used some stevia granulated stuff instead of sugar. Make these!
