Pre Assembled Peanut Butter Applesauce Sandwich
About this Cook
When I am writing anything on this website, I am probably being a little sarcastic. Meaning, I am very serious, because I think that being so serious is a little funny and very useful to a recipe reviewing site. I am very very vegetarian.
My favorite things to cook
I'm really into banana bread, granola, Indian food, and hummus.
My favorite family cooking traditions
Eating the dressing (picking at it, with clean-ish fingers) before it is cooked, while it is being cooked, and before it is on the table. This requires two batches to be made so we have enough for dinner.
My cooking triumphs
The first time I created a vegan grilled cheese... distance does make the heart grow fonder, and grilled cheese is just one of those comfort foods a vegan yearns for. I didn't know about nutritional yeast flakes for months- MONTHS- and discovering them removed any doubts I had about adhering to a vegan lifestyle. Given, I am a hedonist so when on vacation or with a good enough excuse... I do dabble into vegetarianism.
My cooking tragedies
wet, raw banana bread. My love for banana bread transcends all humanistic bounds, and the disappointment I felt when I knew I had failed was indescribable. But I ate it anyways.

Better Peanut Butter Sandwich
I found myself using applesauce with cinnamon on top as a dip for the sandwich. To get the correct applesauce to peanut butter ratio, the dipping was needed. Apple sauce sandwich au jous? This would be good for kids and it was a nice change from my typical peanut butter/banana, which usually fills me up a little too much. I used Ezekiel bread, which tends to stay very crunchy when toasted and prevented any sogginess from the apple sauce.

Baked Kale Chips
These are so good. I prefer them overcooked a little, as they don't store too well if they are chewy. I baked them at 300 for about 15 minutes. I also just sprayed parchment paper with canola oil, then sprayed the tops of the leaves as well. I added some cavendars salt free seasoning. Make these in bulk, because they disappear quickly.

Fava Bean Breakfast Spread
I modified the ingredients to what I had on hand. I used black beans and salsa in lieu of fava beans and chopped tomatoes and onions. I think the fresh lemon is important, so I wouldn't leave it out (I'm lucky enough to have a lemon tree in my backyard). I ate it as a dip and a burrito filling. I think it would be really good with avocado too!
