Slow Cooker Beef Stroganoff I

This recipe (and the reviewers of it) makes me very angry. If you change a bunch of things (or even one or two critical things) about a recipe IT IS NO LONGER THIS RECIPE!! I should not have to read through 50 reviews to know how to make this recipe at the rating it has received. I made no changes at all. It is awful. It is super concentrated with absolutely no sauce. The meat was all shredded up from cooking so long, and the flavor was FAR too salty. Don't make this recipe. If you've tried it with all the million alterations people have insisted you need to do in order for it to be good, then go ahead and submit that recipe to I'll try it -- and maybe it will deserve the nearly 5 stars this recipe has.

Blueberry Cheesecake

Well, I also put some blueberries in the batter -- YUM. I also used one of the premade crusts. Well, I didn't realize that a pie crust is half the size of a 9" spring pan, so I had TWO pie sized cakes! I had to give some away! I also made some blueberry sauce out of a cup or two of blueberries (frozen or fresh), 1/8 c sugar, and about 2 tsp cornstarch (heated on the stove until thick). It turned out FABULOUS.

Grilled Brown Sugar Pork Chops

This is YUM. Pretty sweet. You don't need a lot of sauce. I marinated the pork for about half an hour before grilling it. It turned out great!

Spaghetti Squash with Pine Nuts, Sage, and Romano

This is SO good. It's a shame that the ONE person who rated this one star has to skew everyone's perception of how good this is. It's definitely 5 stars. I had to use rubbed sage (I used 1tsp), but it was still AWESOME. I loved every bite. The only flaw is my spaghetti squash was too small and it didn't fill my family of 4's tummies all the way. This would be a GREAT lunch dish because it's lighter than most meals.

Apple Carrot Muffins

Mock Coconut Pie (Spaghetti Squash Pie)

Wow. I was scared to try this pie, but I'm SO glad I did. It was so good. My mother in law and husband couldn't believe there wasn't any coconut in it! It did take a bit longer to cook and when I finally pulled it out after 50 minutes (and my oven runs HOT) it still didn't allow a knife to come out clean, but it was still great. I think I'd recommend cutting the squash up a bit. When it's long and stringy, it's tough to cut each piece. The whipping cream is wonderful on it -- don't skip it!!

Pineapple Upside-Down Cake II

The only thing I can think of is that maybe people are using too much pineapple?? I used pineapple rings -- just enough to cover the top of the cake. And this thing turned out PERFECT. I honestly wouldn't change a thing about it. Even the topping was perfect. I liked that it was extra buttery and yummy. Have no fear, this is a GREAT recipe.

Snow Cone Syrup II

We keep this in a sports waterbottle (with the special nozzle on top) and it keeps for months! I'm still playing with how thick I like it. This is relatively thick as written (though still fabulous!)

Russian Mushroom and Potato Soup

This is absolutely fabulous! It's a cross between mushroom soup, and potatoe soup -- and the best of both! Everyone LOVES this! It's even great the next day!! FABULOUS flavor! YUM!

Homemade Flour Tortillas

I have a few tips to making these the best tortillas they can be. First off, I used butter because I don't like lard or shortening -- and they still taste GREAT! Next, be sure your dough is a tiny bit sticky -- if it's too dry your tortillas won't roll as thin. I used my dough hooks with my hand mixer to get the dough in a ball, then plopped it onto the counter and kneaded it for just a few minutes. Instead of using flour on the counter (or on your rolling pin when you roll them out), spray the counter with PAM. When you do this it makes it so you can roll them as thin as you'd like and they'll still peel right off for you to throw on your griddle. You want to roll them as thin as you possibly can, if you don't they will be more like gorditas than tortillas (which is great for the times you want gorditas!). I put the leftover tortillas onto foil and them roll them up, placing the whole roll into a ziplock baggie and into the refrigerator. They are great to have on hand when I don't have half an hour to make them brand new.

Baked Tortilla Chips

YUM YUM. I stored mine in a ziplock, and they were actually better the next day! They were less chewy, and more crisp! These are SO easy! Lots of fun. I'll make them again, I'm sure.

Strawberry Cream Pie

I really want to give this 5 stars... but there is a typo (it HAS to be a typo). 1/2 cup cookie crumbs isn't nearly enough. My guess would be that you need 2 or 3 times that many to make up a crust. BUT the taste of this pie is GREAT. LOVE it.

Rocky Road Squares

WOW! This recipe is GREAT. We did exactly as written except I didn't have squares of chocolate. I put about 1/2 c chocolate chips into a sandwich baggie and melted in a bowl over the warm oven (though I'm sure it would have been just as easy in the microwave). Then I cut the corner of the baggie in order to make it simple to drizzle the chocolate over the bars. PERFECT!! These are tasty warm -- but EXCELLENT the next day when they've cooled completely (we made them at night and the next morning they were perfect!)

Campbell's Jambalaya

I thought I was being smart by putting some brown rice in so it would take longer to cook. It made absolutely NO difference. Made as the recipe states, this is a mushy mess. Don't even attempt it unless you cook the rice separately and add it at the very end. I am SO disappointed that I didn't realize this first -- I could swear that I've made this mistake before. NEVER AGAIN. note: to be totally fair, my family really liked the TASTE of this recipe. My 2 year old ate 3 helpings, plus leftovers the next day. BUT I would NEVER remake this recipe as written.

Egg Roll Wrappers

These were fabulous. I bought rice paper instead of egg roll wrappers and thought I was doomed (I had already made the filling and everything!). Luckily my husband checked Allrecipes. This recipe saved my dinner. It didn't make enough, so I had to make another batch (even for just the 2 of us). But they are SO easy it wasn't a big deal.

Spanish-Style Quinoa

This is SO good! I don't typically like Spanish rice -- it's often too dry. This turned out moist and PERFECT. I served it with Southwestern Pork Chops. Even my 2 year old ate it -- and wanted more! I halved the recipe, but I think 3/4 would have been perfect for our family of 4. eta: I tried this with couscous tonight instead of quinoa. The only difference was adding the couscous last, and reducing the water to 1 1/2 c. It only needed to cook covered for about 5 minutes. It was just as tasty, but took a fraction of the time!

Maple Zucchini Bread

Well, I ALMOST gave this 3 stars instead of 4... but I'm still eating the stuff. The maple flavoring makes it taste like pancakes -- but not very good pancakes. I gives me that "artificial flavoring" after taste, too. The bread is really dry (and I only cooked it for about 45 minutes). I wouldn't make this again.

Baja Fish Tacos

I have made these a few times in the past little while! They are so easy and have a great flavor! I didn't use quite as much taco seasoning... and it was Mmm... Mmmm.. Good. highly recommended. My 4 year old gobbles these up! She can eat more than her parents!!
