Brooke's Best Bombshell Brownies

Reviewed: May 29, 2008
I must have overcooked these because they were super crunchy around the edges but too fudgy in the middle. I may try them again. If I do, I'll update the review.

Marinated Pork Chops

Reviewed: May 29, 2008
These were great. I do a lot of sweeter pork chop recipes, and this was a fabulous change. The kids gobbled them up. Served them with wild rice and broccoli. MMMMmmmm...

Beef Stroganoff III

Reviewed: May 29, 2008
This recipe is fabulous. I didn't quite have as much meat as the recipe called for. I used 3/4lb and it was PLENTY -- though it would serve nowhere near 8 people with that much. My family of 4 ate happily, and there was enough for my husband's lunch the next day. I LOVE LOVE LOVE that there is no mushroom soup involved. I MUCH prefer recipes from scratch!

Chocolate Cheesecake

Everyone was absolutely IN LOVE with this cheesecake. I used dark chocolate for the topping. YUM.

Campbell's Jambalaya

Reviewed: May 13, 2008
I thought I was being smart by putting some brown rice in so it would take longer to cook. It made absolutely NO difference. Made as the recipe states, this is a mushy mess. Don't even attempt it unless you cook the rice separately and add it at the very end. I am SO disappointed that I didn't realize this first -- I could swear that I've made this mistake before. NEVER AGAIN. note: to be totally fair, my family really liked the TASTE of this recipe. My 2 year old ate 3 helpings, plus leftovers the next day. BUT I would NEVER remake this recipe as written.

Macaroni Salad I

This was bland. I'm going to have to figure out what to add to make it taste.

Mushroom Swiss Burger

Reviewed: Apr. 23, 2008
I thought it was going to be too crumbly -- but when I put the piece of swiss on top it kept the whole burger together nicely! GREAT flavor. I like this better than the mushroom topped Swiss Burger because this way the kids are SURE to eat the mushrooms, too! :D

Chicken Newburg

Reviewed: Apr. 15, 2008
This was SO good! I loved the nice subtle yet creamy taste. I added some peas to it, but TOTALLY forgot to put in the avocado! I love avocado, too. I won't forget next time! I'm excited for leftovers, too!

Cinnamon-Roasted Almonds

Reviewed: Mar. 12, 2008
I brought these to a holiday party, but we arrived late so they didn't all get eaten. The host told me she really liked them -- and as evidence asked me for the recipe last Easter (4 months after she first tried them!). The leftovers kept very well, too! YUM.

Modenese Pork Chops

Reviewed: Mar. 2, 2008
good change from the sweeter chops I usually make. I did add a bit more chicken broth (sub for wine) to make more sauce in the end. It was great! Served over brown rice.

WOW. This was so great! I wish I'd had more left over!! The cream corn was the right way to go. I doubled the recipe.

Taco Soup V

It really was more like a chili. I think it was because it had so many beans. The croud really liked it though.

Best Ever Banana Bread

I've tried MANY banana bread recipes, and this is my absolute favorite! The only thing I changed was subbing 3/4c wheat flour. SO moist and wonderful!

The Perfect Hot Artichoke and Spinach Dip

Reviewed: Jan. 25, 2008
This was tastey, but not my favorite. My husband thought it had a slightly sweet taste -- and he wished it didn't. Though honestly it may have just been that I used Miracle Whip instead of plain mayo.

Honey Ribs

Reviewed: Jan. 23, 2008
GREAT flavor. But I must admit, the watery oily sauce was a disappointment. I didn't use any of the extra water -- but it didn't seem to make a difference. Next time I'll half (or third??) the beef broth in hopes of having a thicker sauce. Otherwise I loved it.

Denise's Peanut Chicken

Reviewed: Jan. 3, 2008
My husband made this. He did use a bit of peanut butter -- but I think it would have been even better without! GREAT flavor. Be sure to watch how much ginger you use. The more you use, the spicier it will be!
