BBQ Glazed Homemade Meatballs

I did these in a crockpot so it didn't heat up our house in the summer. These are fabulous!! Served on mashed potatoes they're PERFECT.

French Silk Chocolate Pie II

I've made this twice with different crusts. Be sure the crusts are cold before pouring chocolate in. And chill before eating for the best set. This is rich and WONDERFUL.

Honey Garlic BBQ Sauce II

We used this with the "Simple Country Ribs" recipe from this site. It was GREAT because I didn't feel like I was "wasting" as much because I didn't have to open 2 containers of BBQ sauce -- I just made my own! And holy smokes it is great! I didn't use quite as much pepper sauce as it calls for -- I used probably 1/3 and it was still pretty spicy! It's a ton of fun to be able to make my own!

Summer Poke Cupcakes

I didn't use the cake mix -- I made the cake from scratch, so I guess I'm just rating the jello and cool whip topping. The jello made these SO moist. We used blue jello instead and topped with red sprinkles for the 4th of July. YUM. light and wonderful.

Herb Rubbed Sirloin Tip Roast

Well, maybe it was because I covered the roast with foil?? I also added veggies to the pan. This was almost inedible it was so spicy. Maybe it was user error... but oh. my. gosh. Leftovers didn't get eaten at all, either. ****UPDATE*** I made again but used the rub for a pork sirloin roast. I cut back just a bit on the peppers and it was delicious. I didn't cover it this time, and cooked the veggies separate. I'm upping it a star (so, now 4 stars) with a temptation to up it to 5.

Mock Coconut Pie (Spaghetti Squash Pie)

Wow. I was scared to try this pie, but I'm SO glad I did. It was so good. My mother in law and husband couldn't believe there wasn't any coconut in it! It did take a bit longer to cook and when I finally pulled it out after 50 minutes (and my oven runs HOT) it still didn't allow a knife to come out clean, but it was still great. I think I'd recommend cutting the squash up a bit. When it's long and stringy, it's tough to cut each piece. The whipping cream is wonderful on it -- don't skip it!!

Spanish-Style Quinoa

This is SO good! I don't typically like Spanish rice -- it's often too dry. This turned out moist and PERFECT. I served it with Southwestern Pork Chops. Even my 2 year old ate it -- and wanted more! I halved the recipe, but I think 3/4 would have been perfect for our family of 4. eta: I tried this with couscous tonight instead of quinoa. The only difference was adding the couscous last, and reducing the water to 1 1/2 c. It only needed to cook covered for about 5 minutes. It was just as tasty, but took a fraction of the time!

Chocolate Cornstarch Pudding

The texture can be odd... It is delicious for the most part though. VERY difficult not to have clumps though. Be sure to whisk it constantly as it thickens.

Rich Chocolate Brownies

These were the best brownies I think I have ever had (that is saying A LOT). I made them for my husband's birthday. He requested them again a week later, and has asked for them again today (about another week later). Delicious. Freaking Delicious. The frosting is the best part -- though I did replace the coffee stuff with vanilla.

Death by Chocolate Mousse

This is incredibly good! It's rich, but I really didn't think it was overwhelmingly so. I had oohs and ahhhs when I served it to family members at our father's day parties (on two different occassions). I did the recipe exactly as written, too.

Maple Zucchini Bread

Well, I ALMOST gave this 3 stars instead of 4... but I'm still eating the stuff. The maple flavoring makes it taste like pancakes -- but not very good pancakes. I gives me that "artificial flavoring" after taste, too. The bread is really dry (and I only cooked it for about 45 minutes). I wouldn't make this again.

Slow Cooker Chicken Taco Soup

I didn't use the beer, but Oh. My. Goodness! This was fabulous. I put some avocado and cheese on top, and we were in HEAVEN. Leftovers for a few days -- and I actually looked forward to them! YUM.
