Pleasant Pork Chops

I was happy to find a creamy pork chop recipe without condensed soup in it. I used half white cooking wine, and kept the onions in to cook with the chops, but other than that did exactly as recipe instructed. Delicious. The sauce is TO DIE for.

Broccoli Beef I

This is a GREAT recipe. I don't know why everyone was changing everything about it. I added an extra clove of garlic and a tad more broth -- but realized in the end that it would have been better without it. Really. This is a simple and tasty recipe!

Pork Chop and Feta Skillet

This had a fabulous taste, and I didn't marinate it. In fact, I only needed to use 1/4c lemon juice. More would have been a total waste! I used fresh basil (1 Tbsp). I served it with salad and noodles w/ mushroom sauce.

Pork Chops with Burgundy Mushroom Sauce

I actually DISLIKED this one. Pork doesn't go well with red wine in my experience. It's better with red meat. I prefer white wines for pork. This was a waste of mushrooms. I was actually sad when I tasted the end result and I couldn't use my mushrooms in something that I liked. I wouldn't repeat this again. Save your ingredients, and your palate.

Simple Chicken Parmesan

This is SO easy -- but not at all "simple" IMO. There are just too many steps. Not a knock to the recipe -- just to the title! LOL! I've made this about 4 times, and it's been fabulous every time. The sauce is good -- but I always add a bit more spices now. Also, I HAVE noticed that the higher quality tomatoes taste better. I think my favorite is the Organic Hunts Crushed tomatoes. My favorite is using Italian Bread crumbs. That adds a bit more depth to the flavor. Be absolutely sure to pound your chicken. Nothing worse than undercooked white meat.

Pasta Pomodoro

This has such a great flavor! I added a can of tomato paste instead of having it simmer down to get thicker. I used shrimp. It was good, but I think next time I'll do it without!

Quinoa with Chickpeas and Tomatoes

This didn't have a very "full" flavor. The lime actually did more harm than good to the overall taste. The kids liked the Organic Chickpeas I used... but I didn't care for the recipe overall.

White Christmas Cake

This cake is FANTASTIC. It's reminds me of carrot cake -- but without the spices. The other reviewer described it as dense. Well, it's as dense as carrot cake can be, but it's not a BAD dense. It's actually pretty fluffy and light. I made it in 3 circle pans (I don't even OWN that many square pans). Not sure why it's called Christmas cake -- I made it in July. Maybe it's someone's Christmas tradition... Anyhow. The frosting is AMAZING. I got absolute RAVE reviews from everyone that ate it!

Blueberry Cheesecake Ice Cream

This may very well be the creamiest ice cream I've ever had. My brother in law (who is SO picky) said it tastes just like Cold Stone! I wasn't too keen on using up the whole quart of cream (as it's so expensive, and I didn't want it to be TOO rich!), so I used 3 cups cream and 3 cups whole milk (instead of a quart of cream and 2 cups milk). It was PERFECT. Also, the cheesecake pudding was AWESOME in this. I debated on using cream cheese and am REALLY glad I didn't! The pudding was probably BETTER.

Spaghetti Squash with Pine Nuts, Sage, and Romano

This is SO good. It's a shame that the ONE person who rated this one star has to skew everyone's perception of how good this is. It's definitely 5 stars. I had to use rubbed sage (I used 1tsp), but it was still AWESOME. I loved every bite. The only flaw is my spaghetti squash was too small and it didn't fill my family of 4's tummies all the way. This would be a GREAT lunch dish because it's lighter than most meals.

Shrimp Lemon Pepper Linguini

HOLY PEPPER BAT MAN! GEEZ! I would AT LEAST half the pepper. We couldn't taste the rest of the ingredients. Plus, my 5 year old wouldn't eat it (and she usually loves nearly everything I cook). Though... my 2 year old ate gleefully (without the shrimp) -- so go figure. I may make it again... but adjusting the seasoning to our tastes.
