Green Chicken Enchilada

So, I don't normally give anything 5 stars that isn't completely from scratch. But I just have to say, this is by far the easiest way to make TASTY enchiladas without that gross cream of ___ soup ingredient. This enchilada sauce really is great! Perfect for "one of those days" around my house.

Baked Potato Soup

While this tastes good, the recipe calls for probably 4x the basil that should be used. Also, it's a bit too "fancy" for my kids to really embrace.

Chipotle Shrimp Tacos

Balsamic-Glazed Salmon Fillets

This was fabulous. My fish wasn't as fresh as I would have liked, but the flavor of the glaze was strong enough that the fish still tasted fabulous! I plan on making this again soon!

Fantastic Black Bean Chili

I only used half the ground meat (and I used beef because that's what I had on hand). It was GREAT. I have made this twice, once where I added green and red peppers and some corn, and once where I didn't. I actually preferred this unaltered. YUM. GREAT flavor.

Praline Pumpkin Pie II

The spices were overpowering. I almost cried because I used fresh organic sugar pumpkin to make it, and I didn't even want to finish my first piece! My husband said he liked it okay, so I rated it 3.

Black Bottom Cupcakes I

These are fabulous. Nice not to have to frost them for them to be moist and wonderful. I also only got 18. But after seeing how they puff up, I could see getting 24 smaller cupcakes.

Caramel Apple Pork Chops

I made the recipe as written. I doubled the sauce because I read reviews saying I should -- but it didn't need it. When you make the recipe as written there are juices from the chops in the bottom of the baking dish you keep the chops in, if you pour the sauce on top of the chops, all the juices meld wonderfully and the sauce is stretched even more -- plenty enough for the chops. I even dipped some red garlic mashed potatoes in it (who doesn't like pure sugar on mashed potatoes? ;). Overall, a great flavor.

General Tsao's Chicken

The flavor of the breaded chicken was superb. But the amount of cornstarch was absurd. Seriously. You could probably get away with a single tablespoon. I didn't listen to my instinct, and even after adding a bunch extra chicken broth, it was totally off. I was glad I'd saved some of the fried chicken outside the sauce. I might make it again just for the chicken pieces!

Homemade Flour Tortillas

I have a few tips to making these the best tortillas they can be. First off, I used butter because I don't like lard or shortening -- and they still taste GREAT! Next, be sure your dough is a tiny bit sticky -- if it's too dry your tortillas won't roll as thin. I used my dough hooks with my hand mixer to get the dough in a ball, then plopped it onto the counter and kneaded it for just a few minutes. Instead of using flour on the counter (or on your rolling pin when you roll them out), spray the counter with PAM. When you do this it makes it so you can roll them as thin as you'd like and they'll still peel right off for you to throw on your griddle. You want to roll them as thin as you possibly can, if you don't they will be more like gorditas than tortillas (which is great for the times you want gorditas!). I put the leftover tortillas onto foil and them roll them up, placing the whole roll into a ziplock baggie and into the refrigerator. They are great to have on hand when I don't have half an hour to make them brand new.

Brown Rice Black Bean Burrito

I used regular brown rice, sour cream, colby jack cheese, and frozen corn, but figure since that's pretty darn close I could rate the recipe in good conscience. I was a bit worried that the rice mix would be too dry or bland, but was very pleasantly surprised! These are GREAT. I was happy that one burrito was filling enough to make the meal for me! I ran out of tortillas, but hope to grab more tonight so my husband can take a burrito to work tomorrow. YUM.

Ali's Amazing Bruschetta

I was surprised at how bland this was! I had to add balsamic vinegar to make it taste at all. It probably depends on the tomatoes. But I was embarrassed to serve these to my friends.
