Sweet and Sour Pork III

This was great! I didn't deep fry the pork, just fried it in a couple teaspoons of oil. I cut the onion small and I used tenderloin instead of pork butt. I've never reviewed anything before, but I thought this deserved a shout out. Thanks!

Crab and Swiss Quiche

This was really good. I used Dungeness crab that my brother in law caught. I added a little bit of chopped spinach (well drained) just to make me feel like I was getting some vegetables. This also made me feel like it was ok to fry up two slices of bacon (chopped) and then in the bacon fat I fried up some diced onion. Added everything to the mix. Served it for a Christmas brunch and it was a hit.

Dijon-Tarragon Cream Chicken

This was great. I followed the recipe but used a bit more cream for more sauce. Served it over rice with some green beans. I had dinner on the table fast and it was a hit with my husband and my 3 year old.

Caramel Coated Catfish

Didn't turn out anything like it looks in the picture. It was so mushy and wet. I dried the fish on paper towel before I cooked it too.

Slow Cooker Pulled Pork

Meh! This was only okay for me. I figured it would save me time on a busy weeknight to come home to this meal, but then I spent more time trying to get my kids to eat it than I would have spent just preparing something they like better. I didn't feel great after eating it either. Just a bunch of sugar and meat. I made coleslaw to go with it, which helped a bit, but I don't think we'll be making it again.

Crispy Fish Fillets

Yum. I coated fish in mixture of flower salt, pepper & some dried tarragon. Then dipped in egg mixture, but I used Dijon instead of yellow mustard. Then dredged in panko breadcrumbs with more tarragon. Squeezed lemon juice on top after frying, et voila. So delish.

Unbelievable Chicken

Quick, healthy and delicious. What's not to like? Didn't have grainy mustard, so substituted Dijon with great success. I've saved it in my recipe box and I'll be making it again. Thanks!
