Fruity Fun Skewers

Reviewed: Sep. 20, 2011
Very pretty way to serve fruit. I just wonder- the photo shows pineapple & kiwi, but the recipes says banana & apple. Go with the pineapple and you can make ahead. Also substitute the apple for honeydew melon or kiwi. I made these in the morning and kept in fridge until serving later with a fruit dip. A big hit and easy!

Sangria! Sangria!

Reviewed: Sep. 20, 2011
I've tried many sangria recipes and this is the best - and most potent. Before we knew it all us ladies were giggling up a storm! Make a day ahead and it's even better!

The Real Mojito

Reviewed: Jun. 23, 2011
Really good! Don't use spiced rum- it has to be white! I use natural sugar, which doesn't dissolve well. I now use sweetened lemon-lime or citrus sodas instead of the club soda & sugar. I also add extra fresh squeezed lime and get rave reviews!

Kerri's Holiday Punch

Reviewed: Jan. 8, 2012
AWESOME- even for those who don't like hard liquor. I didn't use lemon juice- just a whole can (12 oz) of lemonade and skipped the red food coloring- didn't need it as the color looked nice without it. I made a few mixed drinks for a large party and this was most popular.

Sauteed Swiss Chard with Parmesan Cheese

Reviewed: Sep. 20, 2011
Great recipe! I've made it a few times and each time forget to buy the white wine- it's great without it! But one of these times I'll remember and try it.

Chocolate Chip Cookie Ice Cream Cake

Reviewed: Jun. 24, 2011
I feel guilty for all the compliments I got for making this cake- it was way to easy! All my kids say they want this for their birthdays now. Much more affordable than buying those premade ones at the store and more delicious.

Double Tomato Bruschetta

Reviewed: May 3, 2011
Awesome- have also made it into a salad type dish- using fresh mozzarella balls, and serve with the sliced, toasted baguette on the side (brush with olive oil, lightly sprinkle with garlic powder and Parmesan cheese), easier to bring to potlucks that way (no baking while there required.)

Champagne Punch III

Reviewed: Jan. 8, 2012
This is really good! Pretty color. A good way to use some white wine we bought but didn't like too much. This is a good punch for those who don't want a hard liquor punch.

Huge hit with entire family and frequently requested. We also serve with sour cream and avocado slices. I also found tortilla stripes that you use for salad topping s- very good on it also! Thanks!

Classic Cuban Midnight (Medianoche) Sandwich

Reviewed: Sep. 20, 2011
I had a hard time finding pork lunchmeat- so I bought a pork tenderloin that was already marinated, baked it and sliced it up for the sandwiches- very very good! We don't use sweet rolls, but a nice crusty Italian roll. Everyone loves these!

Chocolate Cavity Maker Cake

If you like A LOT of chocolate then this is your cake. We like chocolate, but this cake should be called chocolate overload! Just not for us- if I try again I'll skip the chocolate chips because the cake part is incredibly delish!

Homemade Chewy Granola Bars

Reviewed: Feb. 14, 2011
I've made these several times, and it's nice to be able use whatever I have in the cabinet. I've added nuts, different flavored chips, flax seeds, etc. I've also use 2 cups oats, and 1 cup steel cut oats and instead of 1/2 cup corn syrup, I use 3/4 cup agave syrup, and am able decrease the butter by a couple of tablespoons. THANKS- great recipe- my kids love granola bars, glad to make these healthier, much more affordable ones.

Thai Cucumber Tomato Salad

Reviewed: May 2, 2012
Love it! Followed the recipe, except substituted stevia for sugar (son is diabetic) and it is great! Some people thought it needed something- I like it sprinkled with Salad Supreme Seasoning- reminds me of a chain restaurant's cucumber/tomato salad.

Onion Rice

Reviewed: Jan. 8, 2012
My daughter who doesn't like onions liked this. I did use instant rice and it turned out great (needed it done quicker). I didn't fry the rice- after sauteing the onion I added the broth, got it to boil then added the rice, took it off the heat and covered it. I also used sweet white onion as I was worried the red onion might not look as nice. Very good!!
